Well done!! Surprised the fish shrunk up that much. I guess dehydrating them is harsher than smoking them. It looked very good!!
It definitely shrunk them by pulling all the moisture out

And since you already have the mold, you could try and serve them Oshizuki with thinly sliced of pickled fatty fish (we usually do it with mackerel but I imagine it would be amazing with trims of wahoo or tuna). Anyway thanks again
I used to spearfish in Oahu and would get some musubi for breakfast every time we went out 😙👌surprisingly delicious.

You should do a shoot and cook shark episode. We get black tip shark occasionally here in Texas and grilling the filets in olive oil and garlic is amazing.

Aloha, and musabi was my go to snack in Hawaii. Pretty sure spam changed the recipe from when I was a kid. The top when you first opened it was a layer of pork jello, now it’s consistent all the way through. I still make it.
Omg I remember the fat on top!
Spam realized that that layer scared many people away from ever using it again lol

Very cool one Will! We dont have mangrove snapper up here in SC (as far as i know) , but i bet this would work well with a small "trash-fish" kind of bycatch one day. Ill have to give it a try next time i get a really big grunt or maybe a decent whiting (northern kingfish)...maybe even a small (but legal) sheephead would be good.

Not any changes, but nothing replaces spam. Any fish would work just cut it according to a slice of spam

We are right in the middle of the Mangrove Snapper spawn and record water temperatures. Finding a decent fish inshore is almost impossible.

@@CookingWithClams I live up on Little Torch Key and have a canoe if you ever want to use it around the area. We have some amazing areas arround that boat can't get into.
Some of the wrecks look like trash that the owners didn’t tow away. However, they provide great structure for fish. So what is better in your opinion? Are there so few people who keep the wrecks out there that it’s actually ok for the ecosystem? Just curious.

So I see you and another TH-camr called key west water guy (or something like that 😂) pass on spearing sharks. I’ve bought and cooked shark a few times and liked it. Is there a reason y’all don’t eat it?
For me there is an abundant amount of other fish, and they’re a pain to process. If I catch a bonnet head I’ll give it a go
