    Glen Hong is right (Duck meat is considered as red meat in Europe) but once grilled add 1/4 tea spoon Baking powder too the meat and let it a side for 20 min. or until ready too add to the recipe. This will make the meat soft as you have never seen, this trick is also good for any meat... From chicken Brest too lamb, beef, pork :) This trick as changed my textures game for so many recipe :) I personally will even try before roasting the meat !!

      You dont want to overcook it - it gets tough. It finishes off in the sauce
