    Made it tonight, and it was delicious! Your videos are so much easier to understand and follow than reading the recipes. Very useful to see how much you take of each ingredient and hear your explanation on why and how. Perfect video cutting also, never too slow nor too fast.

    Another great video guys. What is the power of your induction hob in the video with the flat bottomed wok? I struggle to maintain that heat with mine. Maybe time for an upgrade? ;)

    There was only one place that sold Spicy Mint Duck in Las Vegas. I miss it so much. I had a Thia chef at a restaurant make it off menu for me almost a year ago. I really need to learn to make it myself.

      Try replacing the Thai basil with mint in this recipe! Or even keeping the basil and adding mint in! - Lee

    Giving this a go this weekend. As an aside any chance on doing a tutorial on using and types of chop sticks? I have tried several times but never managed to get it right. I am fed up of my wife showing me up in restaurants with her superior skills. 😟

    I would like to make this for a South East Asian dinner I am making for 10 guests. Thai basil is hit and miss for me Sainsburys have it sometimes and my Asian supermarket never!!!! What can I replace it with? Googling, ordinary basil is not the same but I read somewhere that tarragon might be a good alternative. What do you think? Also Sambal too hot for me but I have make Jeremy's chilli oil can I use it?

      You can use tarragon if you've read it makes a good substitute, but definitely try to get Thai basil! You can use the chilli oil, but it will be different in flavour, still good though! - Lee

    The ducks undercooked. Watch how the screen cuts as he biting into the duck at the end.
    Duck is not something that easily stir fried on a induction cooker. Furthermore, that's a real meaty duck breast so will take longer to cook.

      It looks undercooked to me too, but i'm no chef and not going to draw conclusions bout this. Generally i'm afraid of bloody meat.

    Where do you get that palm sugar which is like a paste?
    I can only ever find the stuff which comes as solid blocks.

      I think it's Mae Sri, but the palm sugar does end up going dry and turning hard anyway so it's better to just use the hard kind - Lee

      It's not that it's preferred, it's just what we have in the kitchen we use to film Saturday specials. But you can still cook good Asian food even with induction - Lee

    Do grocery stores carry duck in the uk? I see all these duck, rabbit, and lamb recipes from the uk like it's just common protien?
    I can get lamb from the butcher, but think I have to go hunting, or to the internet for the others.
