Made this last night. It is hands down the best keto ice cream I've made! After a night in the freezer it is still soft enough to easily scoop, not a block of cement like other recipes I've tried! So creamy. I was a bit worried about making the pralines on our induction cooktop since I couldn't lift and swirl the pan above the heat as the burner turns off when the pan is lifted. However, on medium low with continuous stirring it went to 330F without burning. Looking forward to future add-in flavors.

My heavy cream from Aldi has big chunks like bad milk in there but tgey are the best price. I was in the middle of cheese sauce just used it (years ago I would have never done that!!)It was great anyway.Grouce!! Trader Joes wasn't clumpy but more cexpensive.
OMG this looks so yummy. My Dad's favorite ice cream was butter pecan. Lately I found the heavy cream getting clumpy. We keep our refrigerator very cold. At times it goes below 40°. That's when I noticed the clumps.

I realized that even though I was thin (too thin), my blood sugar levels were creeping towards type 2 diabetes. I’m now off the sugar, and rarely crave anything sweet. ❤️🥳

My keto ice creams were always icing up the sides of my previous ice cream maker. The ninja seems to solve that---and I've only been doing water/butter keto chow ice cream. I'm wondering how your awesome recipe might work in the Creami? Keto chow is fine for what it is... but real ice cream it isn't.

You have to shake your heavy cream before you pour it. That will help the clumping 😉. I love your ice cream recipe. It has helped me I gave no ice cream churn.

This is my first keto batch that didn’t require an ice pick or ten minutes to thaw. Just curious, is it the allulose or the gelatin that makes the difference on the scoopable texture. Weird, it's been a long time since I made this recipe so the only thing I can really think is that they weren't taken far enough or just accidentally to much cream or butter.

Awesome!!! I don't see why not, the only thing is you have to make sure it can handle the amount of ingredients. Most recipes are a little bigger than mine because when I tried doing a 3 cup batch like most recipes are, it didn't get churned enough before the bowl stopped freezing. So if you think it might not handle the recipe, you could cut it in half to start, just to make sure you get some delicious ice cream, lol.
We use to do the old school method in Girl Scouts of putting the ice cream base into a small coffee can then putting that into a bigger coffee can with ice and rock salt around it then roll it back and forth on the floor to each other until it was soft frozen then freeze the rest of the way in the freezer. The other thing you can try is putting the completely chilled base into a large container into the freezer and mix and stir every 20 minutes until you can no longer mix it. Just made this after having it at a friend's place yesterday. I use erythritol (can't buy allulose in Australia, friend brings it in from the US) and it was quite grainy. Any suggestions on how to get it nice and smooth would be appreciated.
It was brand new carton I go through so much so fast they never make it close to the expiration date. It was clumps of fat, I could see it when I heated it the clumps melted into fat. Just don't know why the fat isn't in the cream like it's suppose to be. You're welcome.
Just made this and it's work finally my ice-cream is scoopable not rock hard, allulose does the trick, however can i substitute allulose? Maybe with liquid stevia or it will become rock hard again? Allulose quite expensive in my country unfortunately 😢
Unfortunately allulose or xylitol are the only 2 sweeteners that keep ice cream soft and scoopable. Xylitol is a little higher on the glycemic index and contains calories, also not safe around animals, so I don't use it much.

Allulose is the only keto sugar that doesn't get grainy and crystallized when cooked, sorry!
