Hi there is a fruit call papaya, I’m Puerto Rican and we make it green papaya and it tastes exactly like apples I thought I mention it since it tastes same not the ripe one green one we cook it and add same ingredients as if you were making apple pie like in your video until all water is absorb since is like the chayote has a lots of water I hope you try ! You should talk about the “pro tip” of using a moist paper towel under your parchment paper to stop it from sliding all around the counter. You can use the same method with a cutting board. Looks delicious!
Great recipe! Thanks so much. One thing that I have found helps in warmer weather (I often have temps higher that 110) is to freeze your butter and grate it into the dry ingredients.
I wanted so much for this pie crust to be as easy as you made it look. Oh, yes, you can roll it out, but good luck getting it off the parchment! I chilled it multiple times trying to make it work. I ended up scraping it off and putting it into the pan like a patchwork quilt. I will try it one more time with a little more of each of the flours. UPDATE: I baked the crust, and it baked up pretty well. For those who wonder how it tastes, it doesn't taste like non-keto pie crust, and there is a strong scent of creamed cheese, but it is crispy enough that it is adequate as a vehicle to hold a tasty filling.
If you can find them (hard to find in my corner of Canada) Jicama might also make a great apple substitute. Crisp and tart/sweet like an apple but only around 22 net carbs/lb. Chayote squash is around 14 net carbs/lb for comparison.
The only problem is that jicama never gets soft. I love them and they actually taste a little bit like an apple, but all the cooking in the world and they still remain slightly crunchy.
Somewhere I have a 100 year-old recipe for pie crust and it calls for similar ingredients, egg, vinegar, etc, so this will work great, thanks so much. (It did call for lard, so appreciate your recipe even more.)
Something that would take this pie up a notch (as if it really needs it...I'm sure it's spectacular as is) is apple PIE extract instead of apple extract in the filling. Maybe even in the crust! Yum!!

Thank you for this recipe, I did it and it has a good taste! the only downside is that the crust didn't get crispy enough :( I noticed when making it that it was a little too moist, so I had to add more flour... next time I will be adding only one egg instead of two... or maybe not so much apple cider vinegar...

I've used Olive Nation's apple extract in my "applesauce" muffins, and along with apple pie spice, you'd never know there was no actual applesauce in them. Not bitter at all. Not all extracts are created equal.
Steep a couple of apple & cinnamon flavored tea bags and then add that steeped tea to the pan when cooking the chayote squash with the sugar, butter, etc. I heard this was the best way to make the apple substitute taste like apples.
I decided to try this. It was awesome. My husband loved it too. Pastry was great. The Apple flavour was great. I might use a tiny bit less erythritol next time as we don’t mind things a little less sweet. Still can’t believe the chayote squash. Never tried them before. Thanks so much.

You could try tapioca flour. It’s pretty much everywhere and has about the same carbs as arrowroot (actually a few less) and you use measure for measure.

I did not have high hopes for this recipe, I mean how can you make squash taste like apples. I went ahead and tried it just to see and was VERY pleasantly surprised at how good it was. Thank you. I used the chayote squash and thought the texture of the squash was very similar to apple, not sure how the zucchini would hold up in the heat texture-wise but the chayote was great. When I peeled it, it was like peeling an apple. I also made it a bit sweeter used Allulose and Sucrin gold for the 3/4c sugar sub plus added 20 drops of stevia. To my taste it could have been even a little sweeter; perhaps more stevia sucralose. Anyway it was a very good recipe.
Somewhere someone said speak the zucchini in apple cinnamon tea so I used that as part of the water. I only had two zucchini so I tried to cook down the liquid. I still have too much thick sauce but it's so cooked down it's now chunky applesauce. Still tastes great 😃
Saute and zuchini are considered vegetables where I came from. And they dont have near the flavor of real apples, they taste just like vegetables. I will make this with real apples. Little cheat is fine. I would sooner enjoy it. All I care sbout is less carbs. The rest looks delicious so THANK YOU for this recipe.

I made this exactly as she says. All the same measurements and cooking time. But the Chayote came out as dense as regular apples. They did not get soft like a regular apple would after being in the oven. The chayote was crunchy. Did I do something wrong?
Lol! You can use a a pastry blender or cut the butter with a fork. It takes longer and you will have to make sure you butter is very cold to keep it from melting into the crust but it will work. 😄

Guar gum. Use 2:1 guar gum/xanthan gum when substituting. Gelating might also work but not sure of the ratios.

That's a bummer! You want to cook the chayote until it's softened. It depends on the thickness too so it may take longer than stated.
