How to Make POTATO GNOCCHI Like an Italian Nonna

  • Potato gnocchi are a much loved pasta dish in my family, but no one makes them as good as my Nonna, the Gnocchi Queen! This potato gnocchi recipe has been perfected over the years and has been passed on to my family. With just potato, flour and one egg you can create the most incredible gnocchi pillows and it’s versatile too! Serve it with red sauce, cheese sauce or even seafood...options are endless but the core of the dish must first be perfected!

    How to Make Potato Gnocchi
    For the Dough:
    5-6 potatoes Nonna prefers yellow potatoes
    300 grams Plain flour 11oz. plus more for kneading
    1 egg
    For the Sauce:
    1 litre Tomato passata 4 cups
    1/2 Carrot
    1/2 Onion
    Celery stalk
    Basil
    Salt as much as required
    Pepper as much as required
    Extra Virgin Olive Oil as much as required
    Parmigiano Reggiano Cheese as much as desired
    INSTRUCTIONS
    To prepare the gnocchi:
    Begin by peeling and washing your potatoes. Cut them into small chunks so they are easier to boil.
    Once the water has started boiling, add the potatoes and cover. Allow it to boil for 10 minutes or until you can easily press the fork right through - don’t overcook them!
    Add the potatoes to a potato ricer, bit by bit. You can also rice your potatoes with a fork, but this method takes longer.
    Spread out the riced potato to allow it to cool down and break up any clumps.
    Once cooled (but before it gets cold), bring all of the riced potatoes back together in a pile, and create an indent or well. Break your egg directly into the well, beat by hand, and mix with the riced potato.
    Add flour to the mix and begin to combine it with the potato. Keep bringing the potato and flour mixture together and collect as much excess flour as possible. It may look crumbly, but if you keep working it, it can be worked in and will make the best dough.
    Once the dough is formed and there are no sticky spots, and it is not overly soft, form a small “loaf” and cut. The inside should be soft like a doughnut but with no stickiness.
    Use the cut portion of the dough to roll into a long, thin “snake”. Continue cutting the dough and rolling snakes until all the dough is used.
    Bias cut the snakes at an angle to make the little pillows of gnocchi pasta.
    Transfer the cut gnocchi onto a floured tray. The gnocchi can be frozen directly on the tray and transferred to a ziplock for easy storage (if desired).
    To cook the gnocchi:
    Boil your water and add rock salt then add fresh gnocchi to the pot.
    Because it is fresh pasta, it may stick more. Use a wood fork to stir (gently) and prevent sticking.
    Once the gnocchi rise, they’re ready - if you’re unsure or you prefer them a little harder, taste one!
    Strain and drain well.
    To prepare and cook the sauce:
    Finely chop your carrot and onion and add them to a saucepan.
    Add a generous amount of extra virgin olive oil to the pan.
    Fry slowly and sauté for a few minutes then pour your tomato sauce into the saucepan.
    Add a stalk of celery for an aromatic flavour.
    Allow the sauce to heat and simmer for at least half an hour. When the oil comes to the top, it’s ready.
    Remove from heat and add fresh basil. Always wait to add the basil. If you cook with the basil the whole time, it will disintegrate and add no flavour.
    Add sauce to the bottom of a serving bowl before pouring strained gnocchi on top and covering with another layer of sauce and parmigiano cheese!

      Tourtière at Thanksgiving and Christmas. It's a French Canadian pork mince pie (every family has their own recipe and may include other meat, veg, and spices). My son expects me to bring him one on Christmas. I think it's important to have a few dishes in the family that people eat often and are known well and taught to their children so they can make them for their kids. My grandparents came from Quebec Canada and my Mémère would make it, then my mother, and now me. I will pass the recipe on to my son and his wife so they can make it for their children and pass it on to their families as well.

      Oh we had wonderful holiday dinners growing up in my Italian family. Antipasto, escarole soup, pasta course, nain course, dessert with coffee spiked with Anisette (lol auto correct changed that to "anxiety". ) There was that, too! Hahahahah!

      Agree! The gnocchi do not have to look fancy, with ridges, in order to taste incredible. It's all in the dough preparation, and this video is truly traditional.

    OMG another huge winning recipe from Nonna. I have made gnocchi before but never have they ever come out this good. Better then any restaurant I have ever eaten at. My 2 year old polished her plate clean for dinner, I did make my own sauce using carrots, onion, and chopped tomatoes that I made extra for pizza later this week. Thank you Vincenzo and Nonna for another amazing recipe that will be added to my cookbook. It does make a very generous portion and I was able to freeze half for another fast dinner for later.

    Nonna, you made an absolutely delicious gnocchi and sugo! Suzanne, please follow in Nonna's footsteps, which you did amazingly well when making gnocchi, except for the veggie chopping, but that just takes some practice. Vincenzo, you didn't do anything but eat the gnocchi! LOL Loved the video!

Closest one to Italian would be the German “gnocchi “ called Spätzle that is side dish for many meat cuts and sausages.

    I love this recipe and have made it several times! I was thinking of bringing it to a friend’s party. Do you think i could just make everything and assemble it there or assemble it in sauce before I bring it and reheat it in the sauce?

      There ia definitely no need of semola for gnocchi. Potatoes and flour make the perfect gnocchi. Even when I make ricotta gnocchi or pumpkin gnocchi is just flour.

    Gnocchi are a little bit lime polish kopytka 🙂 but we don't eat them with tomato sauce but with meat sauce But the recipe is awsome ❤️

    To get in touch with my Italian heritage, I am currently making this as I watch it. I don't have the carrot right now, so the sauce won't be exactly the same, but the taste should still be there.

    This is verbatim my bisnonna's gnocchi recipe. Love it! Only difference is she had us kids roll each one with our thumb to make a depression that both thinned the gnocchi and helped it hold the gravy. Not on a fork or ridged board - just roll-flick when she cut them.

    Vincenzo, I tried Nonna's recipe. It was amazingly delicious. I made my own tomato sauce using fresh San Marzano tomatoes but using Nonna's technique. Strongly recommend it. Thanks Nonna, Susanne and Vincenzo.

    Quelli gnocchi seguono *esattamente* la ricetta che usavano le mie care nonne, una bergamasca e l'altra pugliese, diverse in tutto, riguardo alla cucina, ma gli gnocchi erano uguali. Cambiano i sughi, ne puoi trovare mille varianti, ma sono tutte buone. Con l'aglio, senza sedano, ecc... mio padre aggiunge mezzo bicchiere di vino rosso, abitudine che ho preso anche io. Gli gnocchi alla fine sono buoni con qualsiasi sugo. Io personalmente metto molto meno olio nel soffritto, solo il minimo indispensabile, perchè mi piace aggiungere poi l'olio crudo nel piatto.

    Caro Vincenzo, ma tua moglie è nata in Australia oppure diciamo è cresciuta lì ? Perché in effetti lei quando parla in inglese non sembra un’italiana, ma sembra un’australiana. Tra l’altro ci sa fare anche molto bene davanti alla telecamera, nello spiegare eccetera.
    E devo dire che anche la nonna è diventata una vera professionista davanti alla telecamera. Sia nello spiegare le cose, durante i vari passaggi, che anche come comportamento davanti alla telecamera. Ogni tanto mentre procede nel fare e nello spiegare, alza lo sguardo e guarda la telecamera, proprio come fanno i professionisti. Un abbraccio e complimenti alla nonna da parte mia. ❤😊
