Thanks for sharing these yummy meals. We have slowly started to make most meals without meat. Saves money and healthier. We love potato tacos. I dice some potatoes and onions and fry in small amount of olive oil until brown and soft. Use this as your taco filling. Use the usual other ingredients that you would for standard tacos. Cheese, lettuce tomato, sour cream and avacados, salsa. They are so good.
Connie, Thank you so much for sharing these recipes, I am going to try them all! Please share more of your healthy, budget friendly recipes in future videos, I would love to see! My tip for saving grocery money is to meal plan for the week. It really does help to keep the budget under control. I also cook in large batches as you suggested and then I freeze the left overs for future dinners.
Hi Connie, just came across your channel several months back. I love how calm and peaceful you are. I am trying to be more calm and stop and think before I speak and also make my own schedule, not live by someone else’s. I’m curious to know about the chocolate in the chili. I’ve never done that before. Thanks so much for your postings. 😊
Everything looks so yummy!! I have to try all of these recipes!! I think I would add carrots to my chili!! Making taco soup today! The house smells delicious!!
I just stumbled across your videos and I absolutely love your hair!! We are working our way from eating most meat and processed food, just have 3 teenagers makes it hard to get them to change.
Thank you Connie for these simple prep meal options! If you have any healthy muffin or dessert (loving your chia pudding recipes) recipes would enjoy seeing those as well 😊 Have a beautiful day!
They look for wonderful, can’t wait to download the pdf, thank you for taking the time to do that for us, instead of me having to scramble for pen and paper then try and scribble down a recipe as it appears on screen and then make sense afterwards 😫blessings from Australia
The Chili is delicious, I hope you like it. You must be a chef to identify the Al-Clad pots. My ex-husband gave them to me 28 years ago, in hopes I would learn how to cook.😜 I guess it worked.
Hi Connie..WoW!! That Rice and beans (and the Enchilada recipe was AMAZING!!!) I had it with some organic salsa and Siete Tortilla chips. Absolutely delish. Thanks for sharing.
I’m wondering if I can use a tri- been blend that includes kidney beans, pintos and black since I already have those on hand and thank you for your videos. I love your stuff I’m vegetarian also. and a minimalist
Nice recipes! Never had mole chili, sounds yummy! To stretch my budget and add more veggies, I'll add celery and carrots to the mix and serve over mashed potatoes. Why do you recommend rinsing canned beans? I never do and don't mind the results. Seems like there's nutrients and flavor in the liquid. Is it because of salt? I don't have high blood pressure and cook mostly from scratch, so I worry more about not getting enough, especially in hot weather. TFS
I love your idea of stretching the meal by adding more veggies! I chose to rinse the beans to reduce added salt and extra water. It is up to your personal preference.
Great meal ideas, thank you for the pdf! While the bacon must add some nice flavor to your rice and beans, we don't eat mammals... will omit. Certainly will try all of your recipes. Curious about the mole chili!
Wow... looks delicious 😋...I am grateful for the sharing...I will definitely do them. But I will substitute chickpeas for the kidney beans...as we don't like ..but everything else.. yummy.. much appreciated..
Dear Connie, love your recipes for budget meals and your channel. Your recipes are so delicious yes I will cook them all. Can't wait. I clicked on your recommended items and was surprised to find a 700 dollar copper stock pot...if you're cooking on a budget a 700 copper stock pot becomes a 30 dollar Walmart pot quickly... Not criticism rather saying I will find a way around that expensive pot 🤗
I can see you love your copper pot, you probably use it daily. I, too love copper, the beauty it imparts in every day ..kitchen.. life. I really enjoy your channel. Thank for bringing these great recipes to your audience.
You are so amazing. What stores do you do your grocery shopping at? Do you stock up on water? Can you possibly do some in store grocery shopping videos? I think it would be awesome if you could show how you do your full shopping trip
I shop at either our local grocery store or Walmart (it is cheaper). I don't buy water bottles. Our tap water is good drinking water and I use metal water bottles. When I shop, I stick to whole foods.
Home made enchilada sauce is also easy and tastes better. There’s a good video by a Mexican lady on TH-cam for green chili enchiladas made with tomatillo’s and poblano peppers. I can find it for you if you like. You would love it. So full of flavor
I’m new here and I’m glad I found you! Great video and Neal ideas! I can’t eat those beans or onions (high FODMAP) but I’ll for sure sub brown lentils to try these. Keep up the great work!
Because she’s calling it “mole.”However just because chocolate is added does NOT make it mole, not even close! 🤦🏻♀️ Mole is a very complicated sauce, over 25 ingredients (chocolate being 1 of them), takes hours to make and is steeped in deep tradition. True mole is so much more than just chocolate squares. Her recipe is chocolate chili.
Thank you for your response. Yes, you are correct! Traditional mole is very complicated and far beyond my cooking abilities. This recipe is a tribute to mole, but I like how you called it "chocolate chili" 😉
I don't understand what you said at the beginning, you don't eat meat you just take out the pieces. You do realize you are still eating the meat with the renderings, all of that is infused in the vegetables and rice. I used to work with a woman many years ago who she referred to herself as a vegetarian and would order beef stew and take out the beef from the stew and eat the rest, lol I said hun you are still eating the animal! and on top of that she would wear suede and leather, it was the 80's.
My dear lady how is it possible to call something healthy coming out of a store bought canned food. I like your soft demeanor but canned food and healthy don’t go together. Best wishes

What are your money-saving ideas for groceries and meals?
Good ideas. I've always added dark chocolate to my chili. Gives depth of flavor.

I substitute, ground beef or brown lentils, and then add in the taco seasonings to the brown lentils. Taste delicious.

How fun is that chili mole! Would love to know the story behind those beautiful copper all clad pots!

Thanks, for sharing. I just wanted to mention if you have inflammation I would stay away from nightshade/lectins...
A scoop of that chili would be yummy on the sweet potatoes ❤
Great idea!!
I often make stir frys. Fresh veg., Maybe tiny bit of chicken or beef in them
Hi Connie thank you for the great recepies, but I could not find the pfd 😃

I like to rinse canned beans as i think and hope it reduces flatulence! 😉

Sweet potatoes would be good in the rice dish and with the enchiladas.

Your red rice and beans looks amazing! How do you like that kidney beans? I'm always looking for good options for my clients to try!
Yes, I like the variation of the tomato paste and kidney beans vs black beans and rice. This option has a ton of flavor!
I’m new here and I’m glad I found you! Great video and Neal ideas! I can’t eat those beans or onions (high FODMAP) but I’ll for sure sub brown lentils to try these. Keep up the great work!

Hey Connie ! I tried the link above for the recipes to print out and seems its not working. Can you help ?
Hi Connie, I tried to get your recipes for these dishes but it is no longer working. Is there a place I can get them? Thank you, Mona
Made the red beans and rice but left out the bacon and salt.
And then have a beer brewed in Belgium. ;)
What do you feed your kids and husband
Home made tortillas are not that hard to make. You should try it!
Cela fait quand même beaucoup de conserves 😅!
What is that pot made of ? Please don’t tell me it’s aluminum.
The pot is copper and stainless steel.
