I love "Weeknighting" content so much. Your recipes are approachable and are always something I actually want to eat. I also like the foods that are more of a "project", but nothing beats good things I can make in just about 30 minutes without crazy ingredients.

The soup you made must be in every homecoock's repertoire, especially in the colder days when fall is kicking in like we have now in Yurp... Healthy and very delicious, goes a long way with a loaf of sourdough to dip❤.

Please, please - more like this! These dinners are so approachable. Not ridiculously and silly in how they keep costs down. Just smart and not ignoring the test and time factors. I would add in chickpeas and cauliflower to the keema curry.

Veggies are SO important. All my life I barely ate any of them. By 30 years old I was very unhealthy, feeling very sick. My blood pressure and my sugar level in my blood were out of control. I noticed I always felt bad after eating, and from there I realized my diet was very poor.
Long story short, I started eating very healthy and lots of vegetables, learned how to cook them and noted which one made me feel better than others. I started a huge garden and from there I was eating TONS of veggies everyday. In a matter of months, all my symptoms vanished, I felt healthier than when I was 18 years old.
Looking back, I can't believe it took me so long to realize that we are what we eat. If you are eating all kind of refined food filled with chemicals and sugar, all day everyday, its just a matter of time before your body sends you clear messages that you are doing something very wrong,.
Starting a garden helps a lot eating healthy without really noticing it :) Everything taste better when its straight from the garden. And soups are the best way to eat tons of veggies too!
    Cheers for the video Brian

Thank you for making a note of pan sizes at 8:27! A 12" pan has almost 50% more surface area than a 10" pan which is a big deal that a lot of creators miss! Little things like that are why your videos are hands-down the best for home cooks.

All I’ve made so far is the keema curry recipe but OMIGOSH it’s made my life sm easier. After I made it, the leftovers lasted me way more than 4 portions. As a poor person who has to make my own food before work and has a physically demanding, energy sucking job, I so appreciate such an easy-to-make recipe that makes me feel so good after I’ve eaten it. THANK YOU SO MUCH.

I had leftover keema curry(loved it), so I thought for lunch I’d try something adventurous! Used puff pastry from freezer and turned the curry into samosas-ish ! They were so good! Also had some frozen mango chunks so made a quick chutney while the “samosas” were baking. We will definitely add the Keema curry to our regular menu rotation, and make extra for the leftovers! Yum

We call it bean soup (black beans) with white rice and diced onions. :) I recently made this and it was so delicious and filling except only this time I would add diced Avocado. I just started watching your videos last week and love them! Tonight I tried one of your recipes for the first time...the Italian Wedding Soup/Minestrone soup. DELICIOUS! I made a few tweaks but it was sooooo good! Instead of sausage meatballs, I made my standard meatball mix except that I made them with sausage and ground beef. And I doubled the amount because I don't like beans. And instead of kale I used spinach (which I added at the end). Definitely keeping this one on hand! These all look great and I will try them. The first reminds me of something my mom would make the four of us when my dad was off on sales trips: ground beef browned with cubes of potatoes. I think all she added was salt and pepper; she told me some years later with a laugh that it was a Depression dish that her grandmother had made her back in the 1930s. We scarfed it up eagerly; but then again, I used to scarf up Spaghettios and Kraft Italian Dinners when I was in high school. Your stuff is far superior and easy to make! The soup in particular is a fun and interesting idea.

Finally a video about healthy cooking that actually is somewhat healthy. You could say it's a bit too meat heavy and too low on legumes (2 dishes with meat and only one with legumes, I would say the other way around would be way better), but the overall amount of vegetables is good at least. This is actually healthy, not just high protein. Yes, Ethan Chlebowski, I'm looking at you!

Brian I was just thinking of writing you a comment yesterday! About how your style of making and presenting recipes has helped me see cooking differently and shift my view to where I can see myself be able to do some things in the kitchen without fucking up.
I am suspected with ADHD but undiagnosed as of now, and I've only recently realised that that might have a great deal to do with my struggles to "whip up something" in the kitchen on a regular basis. Coordinating groceries, the cooking process, timing and my own hunger has been nearly impossible in the past. I'm also a student with not much experience cooking, and I generally feel like I don't have an intuition when it comes to food, and am too afraid to improvise anything.
Since watching your videos on healthy meals on a budget, cooking under 1 hour and the pan recipes, I feel like I'm slowly getting a basic overview and understanding of cooking that calms my overthinking and anxiety and lets me do something. I've cooked 3-4 times since and nothing has come out terrible, although I do still struggle with drying out chicken and not getting exactly crispy potatoes. I'm feeding myself and that is what matters. I've bought less pre-made food in the past weeks to help me cope.
This is a long comment, but I want to thank you for your thorough presentations and for sharing your expertise with us in an understandable a follow-able way. More videos on easy and cheap recipes or where you explain some basics in cooking or create frameworks for thinking about ingredients and techniques might be amazing, in case you're taking ideas. Thanks again and I'm looking forward to trying another one of your recipes!

  • @serjicalforce

Great content as usual. ❤ One of the things I've noticed on so many videos about eating healthy and cheap - lots of sodium. Which isn't healthy for anyone. When young, you don't notice but the older you get the more salt messes with you. I've always tried to under salt everything and found that vinegar and citrus really helps balance low sodium meals. I don't even need to watch my salt intake at all, but if trying to eat healthier and the daily suggestion is less than a teaspoon a day then it's best that your meal prep isn't super salty. You're going to always get more sodium intake in a day by just drinking water even. So id love to see healthy meals that don't have SPOS all over it.

I make soups like that last one pretty often, some pasta, beans, and usually whatever leftover meats and veg I have around. I love the little sausage meatball idea though. My personal favourite for these kinds of soups is a nice wedge of lemon, and some finely crushed/minced garlic to add right before serving, brightens and wakes everything up really nicely!

Brian, I just gotta say I love these videos so much in which you show us how to make meals greater then their part the most out of your entire catalouge. I recently did your Tonkotsu and it was fanatstic but speaking from my heart, these are the dishes that most inspire me to actually cook for myself. Keep up the good work

I'm just done eating your keema curry (about 5 minutes ago) and I'm absolutely delighted. I usually have all the ingredients on hand (or in the freezer), apart from fresh baby spinach - which makes this all the more usable in terms of "Oh, baby spinach is on offer. Let's cook Brians curry!" :)
Very, very tasty, interesting texture, thank you very much! I'll definitively cook that one more often.

Soup turned out great! Serving tip, no ramen bowls.☝️ Go wide and shallow so it cools faster. It's way tastier at bath temperature than piping hot.
Garnish sparingly. Pepper, EVOO, and fresh parmesean can all blow out your palate... Then it might as well be doctored can soup.

Your keema recipe looks like the perfect answer to what I've been looking for! My partner and I made a vegetable korma with coconut milk last night and we were discussing how our go to keema recipe lacked some cohesion that the korma had. Can't wait to give your recipe a try and thanks as always for the easy weeknighting content!

Love this kind of budget cooking content. I've made your $30 for 5 days of meals recipe twice now. Always a great one when you're getting to the end of the month and need to slow down on spending a bit, but don't want to sacrifice quality of the food you're eating.

Thanks for the great recipes Brian! I tried the noodle dish tonight, had to use some different veggies and didn't have rice noodles in the pantry, so used egg noodles. It was delicious! Will try others next. Thanks again!

Great recipes! You can also blend half of the beans with some of the stock before adding it to the soup, that's a little Italian trick I've learned while preparing zuppa toscana.

I'm not a fan of the first 2, but im glad you included a less foreign cuisine option for picky eaters like me.
I think the minestrone soup is on deck for me for the next few weeks. But im doubling the sausage and adding chicken breast to take that protein up to a non pencil neck level.

Would you ever be interested in making a video about how you maintain your kitchen space? Like how do you keep it clean, procedure you go through to keep it clean, how do you keep it organized etc. I think it'd go along well with the budget videos you are making since some of us, admittedly, aren't so good at organization and budget management.

Keema Curry is great, just made it... but the potatoes take about 30 minutes to get soft. I may recommend boiling them for a bit before planking and stir fry.
