Try it this way one time Christopher - I think you will find the pure brown Maillard crust to be much more intense and satisfying than the black caramelized crust a 600+ degree sear produces. Let us know how it goes!!
Bro trust me wearing at a higher temperature is better because in order to get that perfect crust on a reverse sear you want it to be high med high on yo stove or on numbers 7-8 because you want it to carmelize
