Korean cucumber kimchi is a spicy and refreshing side dish that takes much less time and effort as traditional cabbage kimchi. Technically it's not a kimchi as there is no fermentation involved, but you can get the same tangy, spicy, and crunchy elements in under 30 minutes.
It's a great addition to any Korean dinner table and can be enjoyed with a bowl or rice, stew, and several other side dishes. You can even enjoy it by itself as a refreshing cucumber pickle salad if you so desire.

Btw for anyone wondering…I made it but a little different so here’s my recipe if u don’t have all the ingredients:
1=chillie powder instead of gochugaru
2=normal oil but a very small amount
3=i skipped the fish sauce
4=let it ferment for some hours (trust me it tastes so good)

Where can I find gochu-karu, the red chilli powder
it's called gochugaru, and you ca n find in in korean supermarkets like HMart or most Asian supermarkets

Can we use our country's made chill powder because we don't have gachugaru in our country

You can omit Chilli powder
Use birds eye chillies flakes, korean chillies ate hybrids of Thai chillies

I have no idea but u don't have to make big portions just make as much as you can eat, its better to be safe than sorry (also leaving some leftovers its ok as long as ure gonna eat them the next meal i think)

No the paste and flakes both have different purposes and depth the end result will not be same

You can use Dalda or desi ghee.
It is fish SAUCE, not fish oil. The oil in the recipe is from sesame seeds. 🙋🏼

In south africa and Mauritius there is a similar dish its called carrot salad, made with same vegetables, vinegar and similar spices, the only thing missing from this is roast cumin powder

If you’re making regular kimchi, do you refrigerate it as you wait for it to ferment and if you have kids, do you you put a label on if they get hungry and go in the fridge for to see if there’s anything like the label says how long is been in there fermenting

This is literally my favorite thing to eat
kimchi doesn't take weeks lol it literally takes 36 hours to begin to ferment and you put it in the fridge after about a day and a half to two days. Besides, you can eat fresh kimchi its called geotjeori. I'm eating some kimchi right now that's 2 days old.
Can I use white vinegar instead of rice vinegar?
yes you can but i would add a little more sugar to balance out the stronger acidity of white vinegar

In Bharat we call it Koshimbir. We make it from very old times.
People of Indian origin make a carrot salad similar to this in south africa and Mauritius, I think it awadhi or bhojpuri style, there is also a tomatoes and cucumber salad more Rajasthani and gujarati styled. India has many great cucumber recipes even cucumber raita is delicous
