  • Udon noodles are always stocked in my refrigerator for quick soups and weeknight meals. This udon stir fry was inspired by a frozen dinner I used to buy pre-cooking days. So inexpensive and easy to make! Enjoy. xoxo.

    S T I R F R Y S A U C E
    4 tbsp low sodium soy sauce
    2 tbsp dark soy sauce
    1 tbsp unseasoned rice vinegar
    2 tbsp oyster sauce
    1 teaspoon fish sauce
    4 tbsp water
    1 tbsp brown sugar
    S T I R F R Y I N G R E D I E N T S
    2 packages udon noodles
    Sesame oil to taste
    1 chicken breast, cut into bite sized pieces
    2 cloves garlic, chopped
    1" nub of ginger, grated/finely minced
    2-3 stalks brocollini, cut into bite sized pieces
    10 water chestnuts, sliced
    1/4 red bell pepper, sliced into strips
    1 tbsp cooking oil for pan
    T O S E A S O N C H I C K E N
    1/2 tsp salt
    1/2 teaspoon white pepper
    1/2 teaspoon sesame oil
    1 teaspoon dark soy sauce
    1 teaspoon light soy sauce
    1 teaspoon corn starch

    One of My favorite foods is Udon.
    Udon is a white noodle made from wheat flour. It is thick and soft.
    We can make noise when eating these noodles. Slurping when we eat hot Udon helps prevent us from burning our tongue.

    Can you make this with Khao Piak noodles instead?

      I've never tried but I think khao piak noodles might fall apart when stir frying. Maybe you can play with the starch/flour ratio to make them a bit firmer. Let me know how it turns out!

      I hope you were able to still enjoy it. I should've clarified in ingredients to use low sodium soy sauce, if you make it again, try that or just cut back on the salt and soy sauce :)

    What kind of dark soy sauce do you use?
