  • TikTok made me do it! This SUSHI BAKE is like cooked deconstructed sushi. No rolling required. If you don't like crab, try it with salmon, scallops, shrimp, lobster or any seafood combination you enjoy! This dish reheats well but best hot outta the oven!

    INGREDIENTS (using a 7x11 deep baking dish, serves 4-6)
    RICE:
    3 cups cooked rice
    1 and 1/2 tablespoons seasoned rice vinegar
    1/4 teaspoon salt
    CRAB MIXTURE:
    3oz cream cheese (measured from the package)
    1/4 cup kewpie mayonnaise
    1 tablespoon sriracha
    1/4 teaspoon salt
    1/4 teaspoon sugar
    1/4 teaspoon onion powder
    A few shakes of garlic powder (optional)
    2.5 cups (pre cooked) crab; i used a combination of imitation and lump crab
    1/4 cup tobiko
    Furikake to taste
    EEL SAUCE:
    1/4 cup low sodium soy sauce
    1/4 cup mirin
    2 tablespoons sugar (i used 1.5 because i don't like it too sweet)
    1 tablespoon sake

    This recipe reminds me of a common appetizer in a sushi bar called dynamite. But in addition to imitation crab, dynamite is typically made with leftover scraps of white fish (like snapper and flounder) and either scallops or green mussels. Sometimes a small amount of miru hashira (the inside tongue shaped meat of a mirugai or giant clam) is also added, depending on availability.
    Unfortunately there's no eel in your eel sauce. Eel sauce (nitsume or tsume) also called unagi kabayaki no tare is actually made from the reduced stock of conger eels (for richness) and grilled eel bones (for smokiness.) I would usually cook 2-3 batches of conger eel in the same stock (kept refrigerated between batches, of course) to intensify the flavor before the stock is reduced and the charcoal grilled eel bones added. A quick "mock eel" sauce can be made simply by adding powdered dashi-no-moto (instant dashi stock) to your recipe to add some umami, but it won't have the rich smokiness, or depth of flavor as the original recipe. Though this is similar to the kabayaki no tare you can buy in an Asian market from JFC, Nishimoto, Mutual, etc.

    In Japan, we have "chirashizushi." It's mixed rice too without rolling, but NOT baked lol XD. It has fresh fish, roe, and sometimes omelet, mixed with rice and vinegar. I recommend it since it's light and refreshing. You can enjoy the simple flavors of the ingredients.

    Thank you for the recipe!! Made it several times and all was a hit. I even tried your unagi sauce and never went back to the store bought one again! It was tricky to make, would have been perfect if i actually didn't over boil it like you've warned 😁

      So easy right!! This is a great sushi bake base recipe too. I've made it with so many different seafood combinations and yes, the unagi sauce is way better than store bought bc you can adjust the sweetness level! But please try to go low and slow next time. You don't want to ruin your pots!

    If I have a small amount of cream cheese (like 2-4 oz) and a small container of light sour cream would I be able to use both of those ingredients? I've only seen cream cheese + mayo or sour cream + mayo

      Yes you can use a combination of the two! This is a super versatile recipe. The cc/sc just adds another layer of creaminess to this dish :)

      you can find roe at the asian market near the frozen seafood. I would not purchase on amazon, this needs to stay chilled.

    Do you recommend using Short Grain Sushi Rice?

      yes. short grain tends to hold up better than long grain but if long grain is all you have, it's ok to use it. I would recommend slightly undercooking it since the rice will continue cooking in the oven. I used jasmine rice while recipe testing and it came out a little mushy but still delicious and ate it lol

      As long as everything is cooked, you can eat it as is but baking it melts everything together which makes it so much better 😊

    Try it with baby scallops. When I used to visit the in laws in Massachusetts my wife's favorite spot did a similar dish minus the rice as an app, it was amazing!!!

      Next time for sure. I love scallops as well. There's a handroll place in LA that uses baby scallops and it's my all time favorite combined with warm sushi rice. So simple but so tasty!

      Maybe…the only challenge would be keeping the rice and other ingredients “dry”. Cauliflower has/absorbs so much liquid. Personally I would make the bake separately then assemble it atop cauliflower rice when ready to eat

      Sushi is the general term used. Vinegar flavored rice is the main ingredient with raw or cooked fish, vegetables and many other ingredients like spam.

      hahah I thought it was too but this is definitely an "americanized" version of traditional japanese eel sauce (aka nitsume) which is made from eel broth :)
