Will, I'm so glad you are utilizing seafood that most people would consider disgusting or trash. Searobins for example. They are plentiful. Easy to catch and they are delicious! it's a bit of a pain to clean, but worth it. I make soups out of the bluefish and striped bass heads that I catch and thanks to you, I can make other delicious dishes out of them from watching your videos. Keep the awesome videos coming. It’s really about just getting outside to be honest
Here’s some tips from me aka one of the master crabbers from JB and Captree area. Those small crabs u got are called Atlantic Rock Crabs, Lady/calico crabs only come spring summer and fall and have a circular shell. Rock Crabs as well as Lady and Blue claws in NY come typically in the highest numbers during incoming tide with fast moving water. If u go during slack tide, all ur gonna catch is spider crabs. We have the invasive European Green Crab on the west coast as well. We are told not to throw the back so I usually dispatch them and use them for Cabezon bait.
We use em for tog bait, I also made a bisque from them here in the channel
We have those spider crabs in Jacksonville Florida too, the shell is so hard you for real need a hammer to crack them! They are pretty good eating .
These must have just molted cause I didn’t even need a cracker

Wow! These “ugly” crab made me salivate. I love that you regularly use bycatch and less desirable species to make 5 star dishes! Ps - I really want to know how to make a good seafood curry like you mentioned at the beginning. Can you please show that someday? They look like Jonah crabs, not Calico (aka sand crabs) we get in NJ. Maybe it's just the time of the year you're getting them and the shells are darker

I agree too little meat from the spider crab. I put out stone crab traps up here in Apalachee Bay. When my son Will could help pull the traps we did pretty good. Lots of work so didn’t do it for a ling time.

I make a dish just like it with shrimp or scallops. Pasta, lemon, butter, sun dried tomatoes, garlic and capers. Very GOOD!

Great video. Love how you always go after the under utilized sea food. I have a challenge for you: what about mackerel scad. I think they call um Speedos where you are. In Bermuda and Asian countries like the Philippines they fry them whole but i wonder if you could do a butterfly fillet of them or something? As one of the most prized bait fish, it would be amazing to see if they are edible.
Funny enough I have cooked and eaten them (not on camera though) they’re actually a pain to get. I definitely want to cook them on the channel

Another great video Will. Thank you. I would agree, the yield was slight but the dish looked great. J bet it smelled good. Thanks for the tip on the pasta water being added to the sauce. I bet it tightened it up. I’ll try that from now on when mixing pasta in the sauce pan.

Great video Will! What an awesome way to use something you caught personally that gave such a small yield. Your plate looked beyond tasty. On top of that, you had a great day outdoors. I’m not Italian, but I love the simplicity in your cooking. I’m going to try this with N.S. lobster, they create an awesome broth. Maybe muscles. My daughter (& my wife) will Thank you!

lol I fish field ten all the time. most fishermen out that way are done for the season December-March is kind of our off season. if you see any guys out there fishing they're probably fishing for herring and you'll find the bulk of the herring guys are are at places like magnoila pier or the canarsey pier in brooklyn. I probably wouldn't eat anything caught from canarsie pier but if your in the area still and feel like chucking a sabaki rig out with a gigantic metal flasher you can show everyone what a pickled herring sandwich is

Will, I love your videos! BTW they are not Jonah crabs. I lived in Fort Lauderdale for50 years and the fish mongers would try to pass Jonah’s off for Stone crabs. Jonah’s look like stone crabs. I will try to post a pic of them. Also I have learned so much from your cooking segments, keep up your good work. Question for you…. Do you have to keep the crabs alive like you do blue crabs?

Just about anything I can reach with my Hobie kayak. I’ve gotten set up for spearfishing. My uncle is on sugarloaf so I’ll pedal from his back yard , Sammy creek , jumping bridge. Maybe run over to your neighborhood and put in. Mostly mangrove snappers but maybe I’ll run into a mutton. Any lobster I happen to run across. Just hope the wind gives me a break. @@CookingWithClams

What if the flavor of the crab along with the algae actually make a delicious broth? I don’t have to tell Will this but seaweed is often used as a flavoring agent in broth.

I’ve been accused of eating plenty of weird and/or disgusting food in my lifetime. But I don’t think I’ve even sample spider crabs. lol. More power to you, and at least it makes for an entertaining video. 😜
On a side note….. you mention that they seemed like they might have shed recently, since the shells were soft. If so, that could be why they were so empty. Maybe some hardshell spiders would be fuller?

Will, please don’t take this as being a “youtube fish cop” comment, but I feel the need to tell you. What you were calling calico/lady crabs in this video were actually Jonah’s. They often have size and creel limits, just be careful, please!
Ah thank you! From my understanding they aren’t Jonah’s though, but actually Atlantic rock crab (no regulations) people often call them calicos but a true calico has swimmers on the backside. This time of year the Jonah crab are in much deeper water.

We call them white leggers and they work better then green crabs for tog! Especially in late winter

Sir I think you made a the wrong identification of the crab that you said was a lady crab the two crabs you picked up with rock crabs the lady crabs have they're back legs are paddles the rock crab does not have paddles and with the lady crab the mail has Bright Red Claws and a female have orange Claus their tips so those are rock crabs you picked up not lady crabs or sand crabs is what we call them

Ugly little suckers ......I would boil up a heap of those pesky spiders , chopped up and smashed as an experiment to see if it would be the base for a bisque. I would also cheat a bit and maybe try a sea food chowder if the spiderman broth was edible
I did a bisque with the green crab. These just have so much algae in them
Enjoy your channel, but in this case, I would have tossed the crabs and cooked up the chicken legs!! Too much work!🤨
