  • With ROYAL approval, maids of Honour OLDEST TART has a rich and intriguing history that dates back several centuries. Its story intertwines royalty, mystery, and deliciousness.
    The Maids of Honour tarts are believed to have originated in the court of King Henry VIII during the 16th century. According to legend, one of the Maids of Honour (ladies-in-waiting) first made the tarts to serve Anne Boleyn, Henry VIII's second wife. The King supposedly found these tarts so delightful that he demanded the recipe be kept secret, and it was locked away in an iron chest for many years.
    The story's most famous version is that the Maids of Honour tarts recipe was kept at Richmond Palace, where Henry VIII often resided. The tarts became associated with Richmond; to this day, you can still find them in bakeries around Richmond, London. Some versions of the story also suggest that Henry VIII named the tarts after the Maids of Honour in his court because they were his favourites.
    Over time, the recipe for Maids of Honour tarts has evolved, but they have remained a classic British treat. Traditionally, they are made with puff pastry and curd cheese and sometimes flavoured with lemon or almond. The filling can vary, with some recipes including jam, marzipan, or other sweet ingredients. The tarts are often topped with a dusting of icing sugar.
    Today, Maids of Honour tarts are still enjoyed across the UK, particularly in Richmond. The most famous bakery specializing in them is "The Original Maids of Honour" on Kew Road. It claims to have been making these tarts since the 18th century, using a recipe that dates back to Henry VIII.
    This fascinating blend of history and myth adds to the charm of these delicate tarts, making them not just a delicious treat but also a bite of history.

    Ingredients:
    For the Pastry: • EXPOSED: The Biggest P...
    - 420 g All Purpose Flour
    - 65ml Water
    - 150g Shortening
    - 50g Butter / Marg
    - 1 medium egg
    - 1 tsp Apple cider vinegar amzn.to/49m0tDH
    - 1 tsp salt
    - 1 tbsp of icing sugar or sugar for sweet shortcrust
    For the Filling:
    - 125g (4 oz) curd cheese, cottage cheese or ricotta
    - 1 egg
    - 50g (2 oz) caster sugar
    - 50g (2 oz) ground almonds
    - Grated zest of 1 lemon
    - 1 tbsp lemon juice
    - 1 tbsp rosewater (optional)
    - Apricot jam - Raspberry is probably more traditional.
    - Icing sugar for dusting
    Preheat the oven to 190°C (375°F) or 170°C (fan) and lightly grease a 12-hole tart tin.

    I remember those Rik. Loved them as a child! I grew up in a rural area where the 'old boys and girls' still lived. Rabbit, Venison, Pheasant and the community pig and chickens. Days now long lost in the UK! A wee granny two doors up on the other side of the road made those for the kids in the street. Great memories!

      I used to bake rock cakes for my children and their friends to have after school. I don’t like mixed dried fruit so was never tempted to eat them 😁

      ​@@Whippy99I am like you, I simply _loathe_ dried vine fruits. There's something quite revolting (to me) about all of them.
      HOWEVER, I do not feel the same about other forms of dried fruit, and regularly replace dried vine fruits in a recipe with whatever other dried fruits I feel would be pleasant. What I do, though, is cut up larger fruits - dried dates, apples, prunes, apricots etc - into vine-fruit-sized pieces. Cranberries make a perfect substitute for raisins!
      I have made many teabreads, fruit cakes and the like with dried fruits - just not dried vine fruits!

    I have been making these tarts now for a number of years from a recipe in a book by Jane Pettigrew called “Teatime”, however, in her recipe she includes 75 gram of cold mashed potato, which I have never included. They are a delicious, tasty treat at any time.

Lady Mary Boleyn was my 14x great grandmother, thru the Knollys, then Devereauxs, to the Rich family (Earls of Warwick) for about 9 generations til one married my 2x great grandfather Levi Franklin Jordan in 1858 Maine.     Great memories of my childhood here Rik. My Granny used to make these and they were my favourite as a child. She was a lovely cook and baker, but her maids of honour were the bees knees! I’ve made them myself when my kids were young, and although lovely, they never quite emulated my granny’s. She also used to make a savoury sage and onion scone, that she served with sausages or stew. I’ve never, ever been able to get it like my granny. Mine rise up too much and are more like dumpling. Hers was a little heavier, but crisp and delicious. She made it in a cake tin. If you have any recipes, I’d be grateful. xxxx

    I think raspberry goes better with the almond taste. But everyone to their own, any jam would go well. Nice with a spoonful of custard. Nice to see the old recipes being protected.

    That is exactly the same short crust dough recipe I used for years,so all purpose it works every time. This looks like the recipe that morphed into a Bakewell tart,same raspberry jam😮though a Bakewell is the same as a French Frangipane tart.These type tarts are favorites of mine.😊.

    Ooh we use anari (halloumi curd) a lot in Cyprus but I can impress the rellies now with a good 🇬🇧 tart with anari. These look delicious and I can’t wait to make them. One of the aunties makes different jams so I shall use her product too win win. 😋

    Used to buys these from a bakers called Skeltons they were delicious, and topped with icing …they added a dash of vanilla in there too…amazing. The shops closed 20 years ago 😟

    Note: I had a hard time finding rosewater extract until I saw it being sold at an international market. In my town, it's Imran's, a grocery store/produce stand that sells boxes of dates, Mexican and Indian spices, Daikon radishes, fresh mangoes, and specialty flavorings like rose water and orange water. It's worth looking around and asking for an item, they might have it.
    I'm definitely going to be baking some of these little yummies

    These look very good, but here in the US I dont know where Id find cheese curds. Cottage cheese, drained awhile perhaps? Mascarpone I can find but I like the lumpy curds. Thanks for this treat!

    I have to watch the salt with the diet but I still have to have a little or some foods are just not the same. Greasing the tins real old school still home baking is pretty much now and look just how quick and simple a dozen tasty tarts can be made. Shortcrust corned beef and potato tarts with pastry lids another great snack easy made.

    Ooooh rik, this was a firm favourite in our household growing up and you don't even see these in bakery shops anymore.

    My mother made these little pies with a cheats version which was,
    Use leftover pastry to make the cases
    Use raspberry jam- from the local shop.
    Top with sponge cake mix flavoured with almond essence 😊
