Most of these are the recipes I like best from Jamie. Jamie at Home and the Jamie's Great Britain. I have both those cookbooks. He doesn't do as well with things like ramen. That bowl of soba noodles looks great but wish he didn't call is ramen because it really isn't. And I kind of cringe that he puts miso in the broth as it cooks. That should never be boiled or cooked that long. It needs to be added at the last minute. I'm reminded how much I like to do the beer can chicken which I haven't done in years. And a salmon. Think I will need to do that sometime soon.

Does salt dissolve in oils??
Nope. But why would you want to salt oil anyway? You always mix it with other ingredients in which salt does dissolve, e.g. salad dressing.

The water takes on the flavor of what you rehydrate in it. When added to the recipe it acts as a broth and adds to and enhances the flavor.
