People love you and your recipes. Perhaps, you have a new job and can no longer video yourself, well, do it from home !     I like how you explain what you're doing, and make notes about different possible substitutions (like food processors are ok, but olive oil is not ok). Good video.

    Looks delicious but what kind of coconut milk do I use...head or tail? ...... thin coconut milk or thick coconut milk ?
    And I think I will use ready made thai red curry paste available in stores.
    Also, I'll saute the green and red bell peppers and add them to the dish at the end.

    This is an excellent recipe. I made it vegan ... without chicken or fish sauce. Just add some kosher salt.
    I used a small bottle of Thai Kitchen brand Red Curry Paste to two cans of coconut milk. Be sure to use 'First Press' coconut milk.
    After adding the veggies I cooked for only five minutes to retain the crispness of the veggies. Julienn (sp?) carrots add a nice sweetness to the dish.

      Thai red curry paste you buy from the market is not vegan to let you know. Most brands I have seen has shrimp paste.

      you can buy vegan red curry paste. thai kitchen is vegan. they sell fish sauce separately.

    I could only tell that she said "Lemon grass, galanga and kaffir lime" because I knew it. It would be very nice to have the ingredients written as well.
    Lovely video though, the curry looks delicious.

    I know this is an old video but it's still one of the best red curry instructional videos I've found on TH-cam. However, not being a great chef myself I keep running into a problem whenever I try to make this (or any coconut milk-based curry). How do you get your curry to maintain that nice, thick, creamy texture? As soon as my coconut milk starts to heat up, all the fat rises to the surface and my curry just ends like a big soup of fat and oil. Are you using light milk, or doing anything anything special to it before adding it to the wok? I just add mine straight from a can, but that doesn't look like where you got yours from here, haha.

      Instead of coconut milk, use coconut cream. I think that was what she was trying to explain with the coconut head vs coconut tail. The coconut tail has extra water in it. The coconut cream was only a few more cents than a can of coconut milk and it is so much creamier.

    Lovely dish. Fairly easy to make. I used my magic bullet to mix all the spices with a bit of coconut milk.

    I do believe since coconut milk was added to raw chicken. You can poach chicken in coconut milk. It’s important to remember to bring the coconut milk to a boil, then put the chicken in and reduce it to a simmer.

    Both thai red and green curry is horrible too much sweetness seems someone was making a dessert and by mistake chicken and veggies fall into the wok or (fuck)

    Hello, I love your countries food. I once went to thailand and an old lady gave me her recipe for red curry that was
    Fresh galangal, garlic, coriander roots, lemongrass, fish sauce, oyster paste, turmeric, cummin seed, paprika, Kafir lime leaves, coconut milk, spanish red onion, chilli..... It was BEAUTIFUL. I'm sure yours is too. Thanks - nice video
