    INGREDIENTS:
    Butter sauce:
    4 tbsp unsalted butter
    1 tbsp whole grain mustard
    1/2 lemon (juice and zest)
    1 tsp chopped rosemary
    1 tsp chopped garlic
    salt and pepper to taste
    artichoke barigoule:
    3-4 baby artichokes
    1/2 white onion, sliced
    2 carrots, sliced
    1 garlic clove, smashed
    1 tbsp chopped thyme
    1/2 cup white wine
    1 tbsp white wine vinegar
    1 whole lemon, sliced and juiced
    salt and pepper to taste

    To me, Artichokes are the best when roasted on charcoal, the italian way (you force garlic, olive oil, parsley, salt and pepper inside the leaves and then you roast them). Whenever I eat them I remember when I was little, my grandma preparing them and my grandpa roasting them on his big balcony... and then we ate them at the end of our meal, I used to go all around the big table, my mom and relatives would always save the heart of the artichokes for me because they adored me... happy memories...

    That artichoke plant you had looked massive. You also have the climate for growing them. In my part of Canada, I can't do so. The way you prepared the artichokes looked great. Cheers, Byron!

    We watched this after a big bowl of pasta, and even though we’re full’o food, those two plates of artichokes look divine! We coulda reached through my iPad and snagged a few bites right off your plate! Plus, I’m plotting a back yard location to grow one of those amazing, prehistoric plants now that I’ve seen what you get from them! Have you had any trouble with pests eating the plants?

      Hahaha! Now I want a big bowl o pasta. Funny how that works. The only time pests can be a problem is during the first 2 weeks after it sprouts, but even then I never lost one plug. They’re insanely resilient and would love your place probably better than mine

    Great recipes! If you like artichokes, then you should try a greek recipe called artichokes a la polita. Trust me... It's really flavourful and yummy!

    So the leaves are edible. Nice, I never know this. All I see is poeple just eating the core. In my country they really like the Artichoke tea, said it can makes you more calm, reduce heat in you body (idk how to put it lol but it has something to do with mouth ulcer and more.)

      The leaves are less edible if bought from the store, but homegrown provide at least a few more layers of FULLY edible leaves. I gotta check out this tea though
