    I don’t have an Instant Pot. I just came for the recipe and to see any new tricks.😊 I have some thinly sliced beef chuck that I’m thinking I may use to make Massaman in the same way you used it for your yellow curry recipe. So I just wanted to see what you were doing here. Always love the recipes, and your fun personality (and all the mini implements). Keep ‘em coming!

    Pailin, tonight I made this for a party and it was a huuuuuge hit! I have only ever used Maesri before, but because of your curry paste comparison video and this one, I used 1.5 cans of curry and a heaping teaspoon of fermented shrimp paste to make up for the weakness. It was DIVINE!

    Awesome. I found this recipe on your website from a simple google search and then found this video. We made this and it came out excellent, thank you. We substituted Garam Masala for the seasonings when adding to the red curry paste and then just put soaked fresh tamarind in the pot. The only extra ingredient that results was a little bit of five spice which I could not detect.

    55 mins on high pressure for 3 lbs chuck. Sautéed potatoes and onion for 15 mins afterward. Served over white rice. OMG. Awesome!

    U can steam the potatoes in the microwave, I would have put the onion in with the beef. I did this for mother in law who is Kehmer she said "it good". But yummy in my tummy

    I've had my IP for 2 years now, I have the 8qt and 3qt, and just love them. I cook my Thanksgiving turkey, 10lb, in my IP in less than 1hr and 30 minutes. My fave recipe is butter chicken (Makhani) but now I'll have to give this a try.

    Ohhhhh this made my mouth water!! It looks so good. My instant pot pressure release valve just turns rather than having to push it so a quick flip & your hand is out of the way in a quick release, although of course you don't want to do a quick release for this recipe. Love my instant pot. Can't wait to try this!!

    I long ago consigned my instant pot to the garage as an $80 boat anchor, but will definitely make this awsome recipe in a regular pot. The semi homemade curry paste is genius.

    This came out amazing. Found massaman paste at the Asian market with some Chakoh coconut milk. I did sear the meat it in the instant pot. I have an 8quart pot so I was able to brown it in the pot because it’s larger. Followed this recipe verbatim and it was so much better than the restaurant.

    Love this recipe *so much*. It's one of like three things I make in my Instant Pot. FWIW, I accidentally did a quick release on it the last time I made it and it went fine, so there's anecdotal evidence that it won't explode. :) Gonna make it again tonight -- with bonus fresh coconut milk -- and put some portions in the freezer!

    Quick release for meats can also cause toughness, because the sudden pressure change cause the protein strands to contract.
    You can make some pretty darn good rice in the IP, too.

    I made this tonight and it was delicious! I didn’t want to make it with potatoes, so I just poured the beef and sauce over rice. I would definitely make this again. In fact, I am considering making up little plastic ziplock bags with pre-measured amounts of the “Massamanizing” spices to cut down on prep time. I also plan on trying this with chicken.

    I would probably cook the beef for 20 minutes. Do a quick pressure release. Then add the potatoes and onions and cook it for 10 more minutes. since the food is already up to temperature it will not take long for it to repressurise.

    I just made this today, and it was delicious! I pretty much followed it to the letter, although when adjusting the seasonings I decided to go heavy on the tamarind as I really like the taste. Delicious, I'll definitely make it again :)

    I made this and it was so good! Used a pressure cooker instead of a instant pot as that’s what I have. The beef was so tender and fell apart. Def recommend

    I just want to say that I have finally put my Instant Pot to use and love it so much, but have not made that dish yet, but have tried other dishes similar to it and they tasted great. Boiling eggs is one of the main things I make in the pot and they come out perfectly using the attachment used to do that with inside the pot.

    I made a low sugar cheesecake in this and I was SHOOK. It didn't produce browning, but the texture was excellent - no water bath!

    I made 'mashed potato massaman' a few weeks back because I wanted to my massaman to cook itself in the slowcooker while I was at work... I mean, it wasn't BAD, but it wasn't great! The texture was just mushy! But now I know better.

    I just bought an Instant Pot and wanted to let you know it will save you tons of time especially when you’re making baby food for your baby when he/she starts to have teeth at around 6-8 months. You will have to steam fruits and vegetables and purée it for the baby. It used to take me hours to make baby food, now it takes 10 minutes max. Hope his help you with the new baby.

    This was excellent. We have an older, not so fancy pressure cooker so the sauté part required more attention but daggum this was really good. The Jasmine rice works perfectly with it.

    Looks awesome! I loooove massaman! I do use the quick release pressure but I always drape some paper towel loosely over the valve so that anything that may come out goes into the paper...I am very comfortable pressure cooking so for those who are not; your 10 minute wait is probably best. :-)

    OMG Pai this is the recipe I've been wanting forever! Just had a Massaman last night but know I should be making it myself and not having another paste on hand is very helpful. I agree though it does highlight that the Instant Pot is not 'magic' when you're constrained about the timing of when you can add things. So I wonder how much time was really saved here? You said 3 hours but..... really? A different cut of beef and probably could have been done in the same time as on the stove top. Thank you!

    I use this exact same recipe using venison i also put the onions potatoes and sweet potatoe in at the begining and find they stay intact .

    Nice and yummy dish, the gadget sounds too complex!! We have a simple version of this in India called," pressure cooker" results are similar and we add everything it sauteing the veges n meat along with spices but we don't use coconut milk but water!! However your dish looks delicious.Love you Pailin n Craig.

    Not all InstantPots have that pressure-release valve. Once the little round metal piece has dropped, there's no significant pressure. I figure 1/3rd of the time as a guideline for any braised dish. In other words, if a classic recipe says "cook for 2 hours", I estimate 240/3 = 80 minutes/ 1:20.

    I've never heard of putting a cold cloth on it. You can put the cloth over the vent when you release it... then it's not so aggressive 🙂. You would have to fill it up a lot more for anything but steam to come out...
    And you can pressure cook the potatoes with it. Instead of cooking the meat for 30 minutes, cook it for 15. Put the potatoes, etc in then pressure cook for another 15. That way you don't end up over cooking the meat. 🙂

    I make Kenji's risotto in the instant pot. Have to release the pressure quickly. Just put that towel over the release and turn the release valve. It'll calm the chaos and you can open it right away.

    Thanks for this informative video. I wanted to make curries in it but judging by your experience it doesn't seem to offer much benefit over a slow cooker. Between the preheating, cooking time and pressure release wait time and then having to go back to cooking after all that by adding in vegetables it seems like quite a tedious process compared to just dumping it all in a slow cooker and waiting a couple of hours.

    When I was little I was afraid of pressure cookers, the traditional kind that cook things violently. I also heard numerous stories about exploding pressure cookers etc, just terrifying. Now there's this new civilised electric pressure cooker, maybe someday I'll give that a try
