    Just tried this recipe today and wow!!! My wife has hated chili her whole life and after I got her to try it she went for seconds! Thanks for my new go to chili recipe!

    Pro (amateur) tip here. Use the opposite side of the knife to move veggies off the cutting board! It dulls the blade.

    Hello good sir,
    First off, i love the laid back vibe of the video. The recipe looks very nice and i will definitely try to make this!
    If you don’t mind i would like to give you some tips to enhance the flavor and make the cutting part a bit safer.
    If you put a thin wet cloth under your cuttingboard before you start chopping, it will keep it in one place. So you’ll reduce the chance of cutting your fingers.
    If you fry the beef in a separate pan and in smaller batches you’ll get what is called the “maillard reaction”. Aka the caramelization of the sugars in the beef, which equals to a deeper flavor in the end result.
    Same goes for the tomato paste, which has a pretty high acidity level if you don’t expose it to direct heat. So if you add it to the vegetable mixture before you add your liquids, you end up with a more rounded flavor overall.

    Don’t leave out the jalapeños!
    Remove the seeds. That is where most of the heat comes from.
    But jalapeño adds a subtle yet profound flavor to the chili.

    i made chilli with dark cocoa too. trust me for those who is doubting it - it brings out ALL the flavours and make it so so good

      i made a chili recipe that called for stout, cinnamon and chocolate.....i ate a little and threw the rest away it came out so nasty. i think its def. an aquired taste not for everybody

      @@corsicanlulu i think you may have put in too much chocolate - it has to be dark and no sugar. it adds an interesting note that bring out the chilli. i use 70% dark cacao

    I have been making chili like this for years! This includes the cocoa powder. I also add a teaspoon of ground cinnamon, it helps quite a bit in the heat and flavor department. I learned about the cocoa powder and cinnamon from my Mexican neighbors while my wife was stationed at Fort Hood, Texas.

      Chili isn't from Mexico. It is from Texas. Chili doesn't have cocoa or cinnamon. It also doesn't have tomatoes. KUDOS! for knowing it doesn't have beans.

      Hey Ian- thanks for asking...cocoa helps balance out the spiciness as well as add richness to the flavor-making the chili more savory. As far as adding cinnamon...I accidentally did that with some taco meat years ago thinking it was chili powder...I'm still reminded of that incident to this day...so as far as cinnamon goes...I wouldn't suggest it, but if you decide to give it a go, let me know how it goes.

      Hi JB! Sorry for the late reply... I simmer my chili with the lid off, stirring frequently. With this method, I will generally have to add a bit of water or beef broth to it as the chili thickens. If you decide to get off the path I've paved and throw a lid on it...no worries nothing should happen that will cause you any great angst, but I would keep an eye on it- so it won't burn and stir frequently.       BEANS BEANS???? the musical fruit, the more you eat the more you....thanks for the great question Richard! Beans are definitely an option that some love. If you love beans...throw in a can of kidney beans to bean it up * I like to rinse and drain them and then add them at everyone's request -seems to keep everyone smiling : ) Hope this helps
