TEXAS JALAPENO CHEDDAR CORNBREAD RECIPE- Iron Skillet Confetti Cornbread with Whipped Butter
Looking for a cornbread with a kick? This recipe brings a real Texas flair to your table ready to compliment any soup, stew or yes of course, CHILI!
* WILL NEED AN IRON SKILLET
* FOR WHIPPED BUTTER, WILL NEED A HAND MIXER
* PREHEAT OVEN TO 400 DEGREES (PREHEAT SKILLET IN OVEN)
RECIPE:
DRY INGREDIENTS-
1 CUP FLOUR
1 CUP CORN MEAL
1 TEASPOON BAKING POWDER
1 TEASPOON SALT
IN LARGE BOWL, COMBINE DRY INGREDIENTS AND SET ASIDE
WET INGREDIENTS-
1 EGG
1 1/2 CUP BUTTERMILK (RESERVE 1/2 CUP TO ADD IF NEEDED)
5 TABLESPOONS BUTTER (MELTED)
IN BOWL, COMBINE WET INGREDIENTS AND SET ASIDE
ADDITIONAL INGREDIENTS-
1 CUP CORN (FRESH OR FROZEN)
1 CUP CHEDDAR CHEESE
2-5 FRESH JALAPENO (DICED FINE)
1 TABLESPOON BACON FAT (OR YOUR FAVORITE OIL)
1. SLOWLY ADD THE LIQUID INGREDIENTS INTO THE DRY INGREDIENTS, SLOWLY STIRRING IN, CAREFUL NOT TO OVERMIX
2. ADD THE CORN, CHEESE AND JALAPENO GENTLY FOLDING IN
3. ADD ADDITIONAL BUTTERMILK IF NEEDED, CHECKING FOR A THICK CONSISTENCY
4. REMOVE IRON SKILLET FROM OVEN AND PLACE ON STOVETOP, MELT 1 TABLESPOON BACON GREASE OVER MEDIUM HEAT
5. TURN OFF HEAT AND ADD CORNBREAD BATTER INTO SKILLET, TOP WITH JALAPENO IF DESIRED
6. PLACE SKILLET INTO PREHEATED OVEN AND BAKE FOR 20 MINUTES
7. CHECK CENTER OF CORNBREAD WITH TOOTHPICK FOR DONENESS
WHIPPED BUTTER RECIPE:
1/2 CUP BUTTER (ROOM TEMPERATURE)
1 TABLESPOON MILK
PINCH OF SALT
1. IN BOWL, WHIP SOFTENED BUTTER UNTIL LIGHT AND AIRY
2. ADD MILK AND SALT AND CONTINUE TO WHIP UNTIL FLUFFY
*SERVE AT ROOM TEMPERATURE
IF YOU'D LIKE A SWEETER BUTTER, OMIT SALT AND ADD 1/3 CUP OF HONEY AND WHIP UNTIL FLUFFY.

    I have been making chili like this for years! This includes the cocoa powder. I also add a teaspoon of ground cinnamon, it helps quite a bit in the heat and flavor department. I learned about the cocoa powder and cinnamon from my Mexican neighbors while my wife was stationed at Fort Hood, Texas.

      Chili isn't from Mexico. It is from Texas. Chili doesn't have cocoa or cinnamon. It also doesn't have tomatoes. KUDOS! for knowing it doesn't have beans.

      Hi Jonica! Yes- I do soak them first overnight on the countertop (covered). After they soak, I drain and rinse- and check for any possible debris (ie. stones sometimes found in bags of dried beans) before cooking.     Hello good sir, First off, i love the laid back vibe of the video. The recipe looks very nice and i will definitely try to make this! If you don’t mind i would like to give you some tips to enhance the flavor and make the cutting part a bit safer. If you put a thin wet cloth under your cuttingboard before you start chopping, it will keep it in one place. So you’ll reduce the chance of cutting your fingers. If you fry the beef in a separate pan and in smaller batches you’ll get what is called the “maillard reaction”. Aka the caramelization of the sugars in the beef, which equals to a deeper flavor in the end result. Same goes for the tomato paste, which has a pretty high acidity level if you don’t expose it to direct heat. So if you add it to the vegetable mixture before you add your liquids, you end up with a more rounded flavor overall. Best of luck with the channel and i wish you a good day!

      Hey Ian- thanks for asking...cocoa helps balance out the spiciness as well as add richness to the flavor-making the chili more savory. As far as adding cinnamon...I accidentally did that with some taco meat years ago thinking it was chili powder...I'm still reminded of that incident to this day...so as far as cinnamon goes...I wouldn't suggest it, but if you decide to give it a go, let me know how it goes.       BEANS BEANS???? the musical fruit, the more you eat the more you....thanks for the great question Richard! Beans are definitely an option that some love. If you love beans...throw in a can of kidney beans to bean it up * I like to rinse and drain them and then add them at everyone's request -seems to keep everyone smiling : ) Hope this helps

      Hi JB! Sorry for the late reply... I simmer my chili with the lid off, stirring frequently. With this method, I will generally have to add a bit of water or beef broth to it as the chili thickens. If you decide to get off the path I've paved and throw a lid on it...no worries nothing should happen that will cause you any great angst, but I would keep an eye on it- so it won't burn and stir frequently.
