At the end of the season I just gut out the pumpkins, cut them into large chunks and roast them. Once the inside is soft I scoop out the flesh and puree it. If you have a food scale I like to freeze my pumpkin in 16 ounce servings (close to what a can of pumpkin would be) and then pull it out all year as needed. It can be time consuming, but always worth it!
