Can this also be applied the Grey Knights? I have been wanting to make a grey knights KT but i havent been sure or seen if their rules have been updated or anything has changed.
the sergeants only give an additional chapter doctrine to itself I think, as they read that we "select one additional chapter tactic for IT to have for the battle" as in this unit
Noob question here: Why don't the Angels of Death have tokens like other teams (in the free PDF rules)? My Night Lords and Blooded have them, but it seems like a lot of other teams don't. Do you know why, or how it will play on the gaming table?

Absolutely! I think its the best starter team for new players this edition.
The fact that this team has a real gunner now, but gets to also have 2 grenades, seems like they may finally be good
"finally" as if intercessors didn't release as one of the strongest teams and stayed that way for a long time

Grey Knight are no longer supported in Kill Team unfortunately.

which box,or boxes do i need to play as angel of death? (There isnt a single starter box for this)

This team doesn't have any faction specific tokens you place like the Night Lords poison tokens.

Every model rolls 3 defence dice when being shot in Kill Team.
