    You can make cake flour by removing 2 tbsp of a one cup amount of AP flour and replacing it with 2 tbsp cornstarch. When you have made the substitution, sift the AP flour and cornstarch together before adding to your recipe.

    You can use whatever you like! That's the great thing about baking....I prefer the cream cheese but I'm sure vanilla or chocolate would go well with the red velvet too.

    Hi there...it's considered a large scoop and I think it's about 3 Tbsp in size....you can get them at any kitchen supply store. Yes, I have made blue velvet cake, but don't have a video. Follow this video, except replace the red colouring with blue colouring :) Thanks for stopping by!

    You can divide the ingredients in half and make less that way... you can also freeze them if you end up with too many. If you're making them on Sunday and don't need them until Tuesday, I would freeze them in a sealed container.

    When doubling/tripling etc a recipe, you have to do it with all of the ingredients. So if you have doubled the other amounts of the ingredients, you need to also double the vinegar/baking soda etc. Hope that helps.

    Yes, cake flour has cornstarch added in and it is lighter than AP flour.

    For this recipe I would take out 1/4 teaspoon salt...and that's about it. You should be fine with this substitute. Good luck!

    It totally depends on the recipe....there is another version of RV that I sometimes use with oil...it just depends.

    Using buttermilk is best, and you can make it yourself by adding one tablespoon to 1 cup of milk, and letting it sit for 5-10 mins. We have a video for how to make buttermilk if you want to check it out.

    Self raising flour has the salt and baking powder included. Plain flour does not. Cake flour is AP flour with cornstarch.

    with the vinegar and baking soda you said its a time thing so what do you do with the batter that you set aside for the next dozen of cupcakes? does that matter? by the way LOVE your videos

    hi...what to do with the remaining batter...i mean there were lots of batter remaining after first batch of cupcakes in oven..as u put vingear and bakin soda last moment and we have to be very quick in baking those...pls advise on how to store them..thnks

    i always mix the food coloring with the cocoa powder. that's how ur supposed 2 it. then add it 2 the other ingredients.

    Hi! what is sifted cake flour? Can I use the traditional flour? Or is a kind of prepared flour? (those ones that you only need to add some eggs and only bake). Sorry in my country isn't common so I have no idea...=(

      Sifted flour is like when u strain the flour in a strainer n cake flour is just a certain flour used in certain baking of pastry so yea SIFTED CAKE FLOUR!!!!
