That's the thing, you would think Gilgamesh should have done something like this, from the start, rather than bluntly insulting her; then Enkidu could have avoided death.

Pretty much. Further, the Ishtar we see is a mental fusion of Rin and the original Ishtar. While Ishtar's personality is mostly dominant, she's being influenced by Rin and so is a lot less violent and petty. Even Gil admits to not finding Rin!Ishtar completely unattractive (Nasu has stated that Rin has high compatibility with Gil).

Lets just say the goddess allowed Rin some control every now and then.
Pseudo servants take on traits of their hosts when the souls sort of mix together. I believe at some point it was mentioned that there is probably a considerable amount of Rin's personality at play which is mellowing out Ishtar's personality. She's apparently a right bitch normally.
Ishtar is indeed a bitch, entirely. You can ask Gilgamesh, he rejected her BECAUSE she was a bitch,and we're talking Gilgamesh here so just imagine how bad you have to be for even him to just go "nope nope nope !".
She also doesn't take rejection well since she tried to murder Gil and Enkidu for the rejection and then when she failed sentenced Enkidu to death just to spite Gil.
I might also add the whole idea of pseudo-servants is very unnerving to me. Are they willing hosts? Where they forced into it? Will they ever get their former selves back or are they just mixed into one being forever? Like seriously, this is kind of messed up. As if the idea of Hommonculi being Vessels for the Grail and posessing the original soul of Justeaze (which can take over their original selves completely) wasn't already creepy enough. At least a Homonculus was "created", they weren't normal humans.
