    Cheese Sauce Recipe
    12 oz Russet potatoes peeled cut into small 1 inch pieces
    1 small carrot, peeled and cut into 1/2 inch slices
    1.5 tablespoons of nutritional yeast
    1.5 teaspoons of distilled white vinegar
    1 teaspoon salt
    1 small yellow onion diced
    1 poblano chili cleaned, diced and seeds removed
    2 garlic cloves
    1/2 teaspoon minced chipotle chilis with some sauce from a can
    of chipotle peppers in adobo sauce.
    1/8 teaspoon of ground cumin
    1/8 teaspoon of mustard powder
    Bring 2 quarts of water to a boil in a medium saucepan over high heat
    Add potatoes and carrots and cook until fork tender, about 10-12 minutes
    drain in colander in sink, but do not rinse
    Combine cooked veggies, 1/3 cup filtered water,, nutritional yeast, vinegar and salt
    in a blender. Pulse a few times and scape down the sides until the mixture starts to come together. Blend o hight for 2 minutes until very smooth
    Heat a few tablespoons of water in the still warm saucepan. Add the onion and poblano pepper and cook until soft, about 5 minutes. Add water as needed so they don't burn. Stir in garlic, chipotle pepper, cumin and mustard. Cook until fragrant, about 1 minutes. Stir in the blended potato and carrot mixture and bring to a brief simmer. Once the mixture starts to bubble, stir one last time and remove from heat.

    Potato Bake Recipe
    1 pacakge frozen hash browns (Make sure the only ingredient is potatoes)
    1 package frozen broccoli (cut into smaller pieces if necessary)
    1 cup cheese sauce from above recipe
    1 teaspoon paprika
    1/2 teaspoon chili powder
    1/4 teaspoon salt
    1/8 teaspoon fresh ground pepper
    a few squirts of sriracha
    1/4 cup bread crumbs
    1 tablespoon nutritional yeast
    In a large bowl, add1 package of frozen hash browns. Add a package of frozen brococlli. If the broccoli piece are too big, cut them into smaller pieces. Add 1 cup of the cheese sauce from above. Mix well in a bowl. Add paprika, chili powder, salt, sriracha and pepper. Tranfer mixture to an 8x8 or 9x9 baking dish. Top with a sprinkle of bread crumbs and nutritional yeast. Bake at 400F for 40 mins.

    Instant Pont 3 Bean Chili Recipe
    1/2 cup vegetable broth
    1 yellow onion diced
    2 cloves of garlic diced
    1 jalapeño pepper seeded and diced
    2 tsp chili powder
    2 tsp ground cumin
    2 tsp vegan Worcestershire sauce
    2 garlic cloves, minced
    two 15oz cans of black beans, drained and rinsed
    two 15oz cans of diced tomatoes with the liquid from the can
    one 15oz can of kidney beans, rinsed and drained
    one 15oz can of pinto beans, rinsed and drained
    one 7oz can of hatch chilies
    Set the Instant Pot to saute. Add two tablespoons of water. Once the water starts moving, add the onions, jalapeños and garlic. Saute until onions are soft, about 5 minutes. Turn off heat. Add the rest of the ingredients but DONT STIR IT UP! Leave it all just lumped into the pot. Put the lid on the pot, set to sealing position, and cook on manual high pressure for 10 minutes. let the steam release naturally. Once the pressure indicator has dropped back into the lid, remove the cover and stir. Taste for flavor. Add more spices as needed. Ladle into bowls and serve. Can be frozen for up to 3 months.

    Salad Dressing Recipe (Three parts. Pesto, Buttermilk and Dressing)
    Pesto Recipe (Made in a blender)
    1/2 cup fresh basil
    2 cloves garlic
    1/2 tbsp lemon juice
    1 tBSP nutritional yeast
    1/4 tsp salt
    1 tbs water
    1/2 tbsp sunflower seeds
    Blend all ingredients until smooth
    Vegan buttermilk (recipe)
    1/2 cup plant milk
    1/2 tbsp ACV
    Whisk together and let sit for 10 mins
    Now assemble the dressing
    In blender add:
    add pesto (from recipe above)
    Add 1/2 cup starch solution mayo
    2 tbs shallots
    Vegan Buttermilk (from recipe above)
    Juice of 1 lemon
    Pepper to taste
    Salt to taste
    Blend until smooth, about 30 seconds

    I cannot believe I’m going onto my fourth month doing this and I am amazed how different I feel you have no idea how happy I am that I found the starch solution and so happy that there are other people doing it because not too many people that are in my circle are doing this . And I’m loving every single moment of it as I am transforming at 61 years old

Todays recipes are really fun to make. The salad is pretty involved, but it is an effort that yealds quite a few meals from it. So you will have enough of it to last for a few days for two people.     This wouldn't fit in the video description so I am putting it right here:
    The pesto recipe is: 1/2 cup fresh basil, 2 cloves garlic, 1/2 TBS lemon juice, 1 TBS nutritional yeast, 1/4 tsp salt, 1 TBS water, 1/2 TBS sunflower seeds. Mix in mini food processor till combined. Should be a pesto consistency. Will thicken as it sits for a few minutes.
    For salad dressing: In a small blender combine: All the basil pesto from above, 1/2 cup Starch Solution Mayo (See video on that), 1 shallot chopped, vegan buttermilk (1/2 cup plant milk and 1/2 tbsp Apple cider vinegar-let is sit for 10 mins),juice of 1 lemon and some salt and pepper to taste. Blend until smooth. Should be an amazing green color.

      Hi Hoda, Thanks so much. It's funny, someone said they could tell that I practiced a lot before I went on camera because I was so polished and good at doing this. I had to explain to them that I turn that camera on, no notes, no practice or anything and I just go for it. It's all me. So I am glad my natural self comes across in the videos. I usually do simple food for sure because thats what I like. This week its more involved for sure with the salad and that cheese for the potato bake. But, both those dishes are really worth the effort. Thanks so much for watching.

    Wow that’s all I have to say that is one delicious day of eating but my favorite is hands-down that three bean chili love the addition of the hatch chilies along with the jalapeño you know I like a little spice awesome recipe also love your version of the chopped salad because I love fresh Golden beets they are my favorite. So, when they used to serve that salad at the restaurant before it closed down, they wheeled out a table side service tray and built it all right there in front of you. Then they would dump it all into a bowl and toss it. It was a lot of fun to watch. I always loved the way the layered the ingredients in rows. The dressing is the start of that salad though.     Great stuff. If you add the water you boiled, instead of fresh water, that can improve the cheese sauce. Also, I like to add garlic powder and ground pepper.

      And, I add boiled onion to the boiled potatoes and carrots. But since you have diced onion in the casserole, I can see why it should be omitted from the sauce

    Wow I will definitely be making the potato cheese sauce! I’ve never seen a cheese sauce that didn’t call for using nuts. Thanks for this, I avoid eating nuts because although they are good fats, I can’t control myself to have just a handful and I myself am currently on a weightloss journey. Anyway, I can’t wait to try it with my home made corn chips!

    Tip to clean the pot the beets were in:
    Add enough water to cover the bottom of the pot. Generously sprinkle/pour baking soda over the water. Bring to a boil. Let simmer for about five mins (add water if need be). The burnt stuff will come right out.
    (Yes, it smells awful, but it works.)

    I'm not a big fan of tomatoes but I'm pretty sure I would love that salad! omg. i was gifted a container of couscous i haven't quite known what to do with so maybe i'll try this!

    I’ve been following (and loving) your channel for a few weeks now-never knew you lived in Phoenix-we are your neighbors to the South in Gilbert!...I have all the ingredients for the chili in my pantry and garden..can’t wait to eat it for lunch today! (Harvested my walla walla onions and our jalapeños are plentiful)

    I like nutritional yeast on my popcorn...
    7:27 The potato mixture viscosity is responding very much like cheese. Pretty Cool!
    9:30 cassarole dish looks great.
    Don't stir the beans- got it.
    I love the 99 cent store...
    The chili looks really good and really a toss and let it cook in the pot sort of thing....gotta love that.
    The pesto mixture did benefit from the small amount of the seeds.
    The color is really pretty!
    The arugula will give a nice nutty flavor to that salad.
    The tri colored couscous adds such nice visual interest.
    Joey that final dish of the salad looks great! Easy too! All of it was a triumph!

    This is one of my fav channels because I’m one of those people who always has a question but the way you explain things so thoroughly it works for my brain every time !
    I do have a question though haha😅
    Do you think you could stop the cheese sauce after the blender portion if you don’t like spicy? It looks so good just when you blend it and I wonder if that could work?

      Hi Kendal. Thank so much for your beautiful comment. You can cook the onions and garlic ahead of time if you want, with the potatoes, and then blend it all up and eat it with any of the spices you want to use in the blender. You just wont have the chunkyness of having the peppers and onions in there the way it is now. But, it would be creamy. The blender does make it all look really good and its totally edible since everything is already cooked. Thanks so much for watching.

      Hi Bonnie. I would love to cook for you! Invite me over when Covid is over. As far as the chili, I do eat a salad with that. That is really a bowl of starch and on The Starch Solution, it would be put on half a plate, with half a plate of veggies or a salad. Now if you aren't on The Starch Solution, then of course it's edible just by itself. Its a great meal either way. Thanks so much for watching.

      This chili is easy to make and its good. If you don't have an Instant Pot, you can toss all the ingredients in a crockpot (even the raw onions and pepper) and cook on low for 8 hours. Thats how I made it for years.

    Everything is beautiful. I guess I missed something. Where is the recipe for the salad dressing (pesto)?

      Hi Judy. I could not fit it into the description below the video because it was already at the maximum number of characters that TH-cam would let me use.
      The pesto recipe is: 1/2 cup fresh basil, 2 cloves garlic, 1/2 TBS lemon juice, 1 TBS nutritional yeast, 1/4 tsp salt, 1 TBS water, 1/2 TBS sunflower seeds. Mix in mini food processor till combined. Should be a pesto consistency. Will thicken as it sits for a few minutes.
      For salad dressing: In a small blender combine: All the basil pesto from above, 1/2 cup Starch Solution Mayo (See video on that), 1 shallot chopped, vegan buttermilk (1/2 cup plant milk and 1/2 tbsp Apple cider vinegar-let is sit for 10 mins),juice of 1 lemon and some salt and pepper to taste. Blend until smooth. Should be an amazing green color.

    I’ve wanted to make this since I saw it here. I finally got the chance today, using a 9x13 CASSEROLE dish. I don’t think 1/2 the the dish is a serving, is it? It was that delicious. I topped it with some siracha. Thanks for the CASSEROLE recipe, Joey.

    Great video! So I do have a question- with your morning meal- did you count the broccoli that’s in it’s your greens? Same with your chili?

      Hi Nancy. On that meal, yes the potato broccoli bake is the 50/50 plate. You have to make sure you get a big enough piece that you dont get hungry until lunch. If I wasn't filming, I would have eating a much bigger piece. I also get fruit with breakfast. Cantaloupe, watermelon, grapes are all in our fridge right now. Good question.     There are many different kinds of "white" rice. I'm not going to split hairs on, sticky, sweet, sushi, short, long, but I would like to find out if McDougall has ever said anything regarding "Basmati" (long known for its lowest glycemic index of all the white rice) compared to a regular Calrose or Jasmine. I never get a reply when I just send this into their site. I imagine it's because I'm not in any of their programs.

      I never worry about the rice. I just make sure it doesn't have oil in it. I dont really eat enough rice meals to worry if its black or brown. Usually I use long grain brown rice or basmati. Thanks so much for watching

Not concerned about black or brown either, but I think there are big differences in white rice, long grain white basmati being the best, especially if your going to eat it as a daily staple as he often says. I'm guessing he doesn't want to confuse people or have people arguing over the dozens types of rice and jus wants people to eat more rice and potato's.

      I used a 16oz package of hash browns from Sprouts. They are just grated potatoes so you can grate your own for sure.

    Who the hell thinks beans don't belong in chili? What? Way back in the day that's all people had to eat most of the time. Chili is a bean dish. Those who think otherwise should really check out some history.

    I had a question about breakfast. When making oatmeal is there a certain amount you should allow yourself to eat

      I use 1/2 cup oats, 3/4 cup plant milk (I like it thick, but use 1 cup milk if you like it creamy), 1 tbsp maple syrup, 1 teaspoon cinnamon and 1 tablespoon chia seeds. Shake shake shake and leave in fridge overnight. Then I warm up the next day in a bowl, add fresh sliced banana on top, some blueberries and dig in
