Definitely can find an enormous amount of dandelions in the greater SanFran area !!! Just make sure they are far away from roads, rainwater drainage, and other land/water pollution. Dandelions are excellent for you - even 1 leaf a day makes for a healthy addition to any meal.
What a wonderful man. He's surely forgotten more about cooking than any of us have ever known. Thankfully most of his catalogue of work is archived on this very site. I love looking through the new segments just as much as when he had his own shows.
My mum used to prepare dandelion greens for us when we moved to America from Africa. She was a farm girl from a poor region in Latvija near Russia, but she had the best recipes for simple ingredients.
When I was a kid and my grandparents would visit in the spring my grandfather would ask us to get dandelions from the yard then he'd eat them or boil them for a salad. He was from southern Italy and that's what he did as a kid.
I have many memories of my grandmother in Europe going very early in the morning to our backyard, and using a small knife, digging out spring dandelions for a delicious salad, sometimes adding small cooked potatoes.... Yummy 😋
This is awesome! I have always been skeptical of trying dandelions, but that salad looks delicious. Thanks for sharing a bit of your childhood with us, Chef!
I am enjoying these videos with Chef Pepin so much! it's such a joy to watch him in the kitchen - and he makes it all seem so natural and easy - not intimidating at all. I've already bookmarked several recipes to try - and THIS is one of them! Here in Alabama we have dandelions everywhere in the spring and all summer long and bacon? yes! I'll try this one for sure. Thank you KQED for sharing these special programs with all of us.
Yum! My family(ancestors) have always used dandelion in cooking...they were known for trading their dandelion wine( which i still make)😊 for edibles for dinner😊 i use dandelion leaves in a sautéing mix with mushrooms and add spinach. The roots i use to macerate in 100 proof vodka as a tincture.
I helped my grandmother gather and clean dandelions, she made dressing of vinegar bacon with a pinch of sugar - an enduring summer delight ! Love Jacques recipes
4:40 - Jacques’ “father was a very big dandelion”. I love Jacques and watch all of his videos but this little slip of the tongue had me laughing a lot. It’s so wonderfully absurd an idea.
My old neighbor would make dandelion wine at this time of year, it was fairly potent to drink. I think I will stick with the salad Jacques has made from his youthful years.
I have a cat who was 16 years old. She had dandruff and dull fur. I started giving her dandelion for a month. After a month, she got rid of dandruff. And the fur became shiny like a young cat's. Dandelion given regularly works wonders.
This looks so good, Chef. You are truly a Master. My folks have some property in the low mountains east of Seattle. They do not fertilize their grass because of the wildlife (deer families, bears, raccoons, hawks and eagles), so I pick their dandelion leaves for them to use in soups and salads. Mom will be 85, and dad will be 84 this year. Cherish them while we can, right? We cherish you, Jacques. You are truly a Global Treasure. ⚘
My dad knew a guy who owned a bar that he went to a lot and he made dandelion wine all the time and would only serve it to his best customers I guess it was some pretty potent stuff
In the German border region to France (the Saarland) the "pissenlit" is called "Bettseicher" in the local dialect. Which means exactly the same and refers to its diuretic properties 😁
Raw dandelion is a bitter green, similar to chicory. The added savory and salty elements of the bacon and anchovy paste probably offset it nicely. Let us know if you give it a try.
funny how people didnt have that much heart attacks Despoten eating Butter, eggs... some thousand years ago the problem are the New chemical Foods. not natural old food
I'm very disappointed with this channel. I've been waiting for a whole Pepin show for three weeks and you are not posting it, just this short videos. I'm still waiting.

Thank you for these added tips!
Ditto the Seattle area, as well. 👍
@@majoroldladyakamom6948 Northwest Washington is dandelion heaven.
@@majoroldladyakamom6948 not many here in shelton. Amazing that 3 of us are here in the comments. 3 of us that live in washington lol
Tremendous amount here in New Jersey. All the old Italians used to pick it.
Only Jacques says "sometimes I do it differently but I forgot". Thank you so much for everything you have taught me.

Yummmm. Salad made from yard weeds, anchovies, and bacon grease. What a masterpiece.
Jacques on fire, lately. Great great videos. Blessings
I pick dandelions from my yard and feed my tortoise with it. They love it
I bet that is so cute 🐢🥬
Chef❤. Thank you for sharing your knowledge. I've been watching you on PBS for years. ❤
Dandelion Salad with Pancetta of the gods!!! That looks good!!!
Fabulous! I remember my mother would gather dandelions in the spring for the “spring tonic”.

Dandelions are very underrated. I love them blanched, then sautéed in olive oil, garlic, capers and finished with lemon juice.
@@pwp8737 that sounds delightful as well 👌
chef Jacques Pepin 👍👍🇺🇲 Wednesday schedule

Thanks for watching! Let us know how the salad turns out.
They eat them in spring before the dandelions get tough and too bitter from the heat of summer.
Fried dandelion flowers are also a classic summer snack! Adore watching Jaques hope to continue watching him for many more years
Marvelous Jacques!!!!!!!

Thanks for the recipe Chef Pepin!
these videos are so comforting. It's like if i was cooking with my grandpa. Thank you Mr. Pepin
I like that you are using dandelions you picked yourself, too many are buying this at the super market, no good.
Wow. This is new to me. I don’t remember hearing about eating dandelions or their benefits. Fascinating.
My dad knew a guy who owned a bar that he went to a lot and he made dandelion wine all the time and would only serve it to his best customers I guess it was some pretty potent stuff
c'est charmant, comme d'habitude
Nice
I love dandelion grees
The best of the best chefs.
That looks fantastic!
Merci! I'm going to try this.
this is the real food
Thank you, sir.
marvelous. yes and cleansing is so important to do for us all :)
Looks delicious!
Looks delicious! Chef Jean .
Very cool shef👌
I never knew you could fry a salad in so much oil. Just kidding.. just kidding... it looks delicious 😃
yummy
I've eaten dandelions for fifty years now and I still like them, sometimes I just use the greens

Yes, Wednesdays are the best.
Wednesdays were what I looked forward to during the pandemic! A weird but memorable time
@pinkslehuit Wednesdays are when I decide to be needlessly violent towards my wife

That would be good with a poached egg on top.....like salad Lyonaise .
I eat dandelion quite often myself.
I know this is about Dandelions, but could u substitute Arugula? for the green.
dandelion salad is a bit more complicated in Palestine kitchen> we cook it in hot water to reduce bitterness, then we fry and do whatever we want>
Fried dandelions sound good. Honestly, fried anything sounds good to us.
I would have never thought dandelions were culinarily valuable.
If I didn't put down Fertilizer, I would be picking the dandelions in my backyard
Dandelion is the first plant to grow in spring. It makes a great spring tonic! No thing sweet? Isn't it bitter?

Can be sauteed in butter with onions and garlic then top with a bit of ketchup and lemon juice to offset
bitterness.
❤❤❤❤
Im read it without my glasses as salad with placenta 😳🤯😮💨😬🤤
Is there a reason you didn't deglaze the pan with the vinegar insted?
I guess... Because it's a salad after all, he doesn't want to bring too much burned flavours from the pan. Cheers 🍷
Did Jaques touched the hot bacon 🥓 directly from the hot frying 🍳with his bare hand???
In the uk I always thought these were weeds?
Dandelion is a bit hard to find, I might just make it with the bacon, garlic & eggs.
Baby spinach is a good substitute. Raw or sauteed.
😃👍
😋
Make sure that you pick them from where dogs are likely to have been!
has anyone tried it ?
"Dandelions" - guy from the beginning of ninja turtles
Oh boy, when you live in a bigger city it's almost impossible to get some "clean" dandelion... There are people and dogs EVERYWHERE!... 😭😅😏
Grow it in pots from dandelion seeds
That chefs knife he was using probably cost more then I make in a week.
Surely "pissenlit," not "pissentil," no?
He makes it looks so easy and he's so smooth with his movements. G.O.A.T. But, while the bacon grease is very tasty, it's VERY bad for you.
What we consider as weeds, go figure.
A nuclear bomb of cholesterol. Bacon, eggs and anchovy paste all together with butter will surely get you a nice heart attack in the future.
