My ‘go to’ one sheet for week day lunches is roasted red vegetables soup. I roast 2-3 chopped up sweet potatoes, 2 sliced red peppers, 2 red onions, loads of tomatoes and I throw a few cloves of garlic on top.Start with the potatoes as they take the longest - about 40 mins and add the others part way through. When done, throw all in to a pan and add veggie stock (as much as needed and add more if too thick 1 - 2 litres?) and chilli flakes for an extra kick. (I sometimes add lentils too for extra protein, but then need to allow a bit longer for boiling). And then blend it all up and serve! Freeze or keep in fridge for 3-4 days of lunches!

GAME Changer!!! we've been making it this way for three years now and never looked back. put all the uncooked ingredients layerd how you would a lasagana in the crockpot on high 4 hours exactly. not being funny.. even at three hours 50 min the noodlels arent ready! we use tofu , basil, noosh and spices for the ricotta, lentils and walnuts for the meat and you can use whatever sauce you love, if we don't make homemade we use raos. laywer with different vegies each time but mostly mushroom onion pepper or just the tofu and meat and sauce!
Thinking could access those El Rancho tortillas at Wholefoods? I have seen the Ezekiel wraps yet not in my area. I have some great sheet pans so I am looking forward to making this recipe and following your lead. Thank you for your wonderful content! 🙏🏻
Hi Tia! I am thinking this would be even more delicious on a crunchy taco shell...like a tostado. Maybe put the tortilla in the air fryer and it could crisp up that way without adding oil. I will have to try that. Thanks Tia!! :))
making these very soon, I just wish I could do smoked paprika, it overpowers everything for me. I've done something similar to this with taco seasoned tofu cubes or strips, or seasoned soy curls. Thanks for another great idea

There used to be a brand…fiesta I believe, that I loved and they were 40 calories each. I can’t find them anyway so these are the next lowest in calories :/
I think it would work…similar to the cheese sauce subbed with white beans. Maybe you would need a little more seasoning to compensate for lack of flavor though. Try it out.
I have not been able to find oil free tortillas anywhere near me. 😢. So I still eat them on occasion but I often go for bowls because of it. It stinks because a good wrap or taco is a perfect plant based food.

I understand, I can’t eat much fat at all. You do what is best for you 😀 maybe skip the avocado. As far as tortillas, I’m not sure what is over there to suggest. You can always skip the tortillas and put it all over a bed of lettuce and have a fajita salad. You could also slice up some sweet potato (like a slice of bread), and toast it and put the fajita “mix” on top of that.
