    My mother would boil the beets first and the after they had cooled some she would put us 6 kids outside at a table and we would slip the skins off. Because of how firm the beets are the skins pop off by lightly squeezing the beet. We always thought it was a fun job and mom was smart enough to know that if we did it inside the entire kitchen would be red.
    We would separate them by size. Little ones would be canned whole. Larger sizes would be sliced or cubed before filling jars and processing.

    I canned the strawberry lemonade concentrate recipe from Ball and it's delicious! It might be another idea to preserve your lemons.

    Around here in Western New York state, and I'm sure around the country, you can contact your local high schools FFA ( Future farmers of America) chapter.
    Usually in November or December they take orders for bulk citrus.
    This way you can support a worthy group and get large amounts of citrus for decent prices.

    Hi!
    About beets... I never seen anyone canning raw beets.
    I live in Sweden and here be take whole beets scrub them and cut of the "greenery" but leave he "root" and top so they don´t bleed. After that we take all the beets and give them a quick boil in a large pot with salted water. We strain them in icecold water and the peels is sooo easy to get of this way, they just fall of in large chunks. When the beets has cool off a bit we slice them in about 0.5cm slices. We cut away the top and root and put the rest of the slices in jars, pack the jars really full and pour over a mixture of venegar, sugar and water. Sometimes we put whole pepercorns, ginger. fenel seed or chili in the jars to. These beets we eat cold with our dinner or on top of sandwiches. Sometimes we make a "salad" with beets, majonaise, sourcream aso. That salad is traditional with our Christmas dinner.
    The beet root powder, Here all bakers, confectioner aso who are working with high quality and are eco-friendly use veggie powder to color their procucts.
    If we want raw beets all year around (same with carrots, potato, turnip, sweedes aso) we either put them in a root cellar or in a fridge. Sometimes ppl dice them, boil them fast, cool them down and freeze them but the traditional way is to keep them raw in a dark cool place.
    I make marmalade (the kind you put on toast) from citrus peels. Nothing goes to waste : ) and sometimes also candied thin slices of lemon peel. I don´t eat it myself but friends and family do.
    I find it very intresting that we do alot of preservation so different yet all the methods work and I can definately find inspiration and new recipes by looking at videos like this one.

    I don't know if you will see this as it is 6 months after the fact......but dehydrating (and now freeze drying) your lemon/lime slices is awesome!!! I first learned of this about 45yrs ago. A family friend from Iran made dinner for in our home. It was so awesome that I've been making it for everyone ever since...I was only about 11 when this was made one time!!!
    Take your dried lemon slices and grind them in your blender - not to fine!
    Sprinkle over cooked rice along with some saffron!!!!! Excellent!!!!!!!!!
    He gifted us with a large jar of each.
    I have since taken the idea and expounded upon it in multiple ways.
    I encourage you to try it and play with it for many culinary and other delights! 😊😊😊

    Try Preserved lemons! Here’s how: For a small glass jam jar with a tight-fitting lid: 1). Juice 2 lemons. 2) Cut 2 more lemons into narrow wedges & stiuff into your jar. 3) Pour 3-4 tablespoons of salt over the lemons in the jar. 4) Fill jar with lemon juice and seal with a tight lid. 5) Leave on your counter for 7 days. Shake every day to distribute the salt. 6) Top with a little olive oil & put in the ‘frig. Leave for at least 7 days in ‘frig.
    We love them on steamed veggies (broccoli!), avocado, salad dressing, last week I added to a pot of risotto… You can top off with more olive oil as you use it up. This cuts the sharpness. I prefer the sharp salty taste! Keep indefinitely if the refrigerator. Makes nice little gifts.

    Just a little tip... it would be easier for you to put the trays either in the freezer or into the freeze dryer BEFORE you fill them up and you won't have to worry about spilling everywhere..it helps doing all liquid stuff this way. Isn't it so much fun .. if anything comes out sticky then it just needs more time in the freeze dryer and it's amazing to use for lemonade, you could probably just Make your lemonade then put it into the freeze dryer and then just add water when you wanted it.. idk just a thought

    You can also make candied citrus rines for baking Christmas cookies. We usually did lemons and oranges, but have heard of others candying grapefruit and limes too. Would save money too because store bought are expensive. Bless you all!

    Hi Friend! I just saw an article where you can juice lemons in bulk using your mixer! It says to quarter them and mix with the paddle for 2 minutes. I can't wait to try it myself, but I thought of your bulk order and wanted to share with you. Maybe would save you and the kids some time and wrist strength!

    Hii!I have a tip for you.Those lemons u juice we actualy grate the skin off( helps a ton with juicing) and freeze them in jars.Those grated skins we either mix them with the orange one's or some leave on their own and add to pancake mix,any biscuit,cake,cookie.They are very healthy for ur liver and also tasty in cookies.I also use them in the lemonade at times/tea/pickling.You can add them to cleaning producs,to cosmetics too.Hope you like the ideea.I love your ones I just need a freezedrying machine.

      And even easier than grating is to use a peeler to get big pieces which are easy to grind/dice.

    Try zesting your lemons then peeling off the white pith. Freeze dry the zest and grind to a powder. I then put the peeled lemons in the blender to liquify. I do strain out the seeds. I use the juice and pulp to freeze in jars for lemonade and ice cube trays for cooking. . The only waste is the white pith. That goes to the compost pile.

      Absolutely! I do it all the time. I have better luck with wide mouth jars - both pints and quarts of soups & stews. She is right about leaving A LOT of head space.

    You can make lemon pepper seasoning out of the pills of the lemons you also can preserve them in honey and ginger and that’s good for tea as well you can cook with the pills of the women in stirfries

      You just dry and blend up your lemon peels add black pepper parsley salt if you like garlic put a one to one ratio or you can just leave it as dried lemon peel into your recipes it would be fine just like that as well hope that helps

    Wow what a great score of citrus. I get excited when I get to Costco and buy a bag of lemons. I live up in northern BC so quite as easy to buy,large amounts of citrus. But I am so happy for you and your family that u can get it

    I've got a lemon tree (so blessed!) and I always find it very interesting to see how everyone else puts them up. I always salt preserve a bunch, and dehydrate slices for things like tea. :) (In addition to freezing juice and such!) I freeze dryer is SUCH a wish! Good luck with your powders.

    I use my freeze dried beetroot powder to make borscht! I add freeze dried powdered chicken broth ,carrots onions, garlic then canned kidney beans and sour cream. It's soo good!

    I juiced some limes and pomegranates to can but my husband and daughter started adding it to everything. I didn't think they would like it so I only made a little bit for me. Now I think I need to get a case of lemons and a couple of cases of pomegranates.

    Thank you again for sharing this journey. So many great ideas. I bought the sprout mix and can't wait to start growing them. Looks so easy. Will even have a jar in my office window at work to eat for lunches. Searching to citrus availability. I saw an idea for preserving lemons. The froze them whole. After frozen, was able to zest them then put back in freezer until they were ready for lemon juice. Stay warm. Ohio is really getting hit these last 2 weeks. Be safe.     Jessica a tip for you on freeze drying citrus. I find after a week in a sealed jar or mylar it starts to go soft. So what I found works is to run it thorough the freezer dryer twice. I think the membranes are the cause. My orange juice freeze dries just find, but if I do the fruit which taste so good, I have to run it twice. Hope that helps.

    I noticed my juice comes out sticky and never seems to dry completely if the fruit is too ripe.
    I add extra water to my juice before freeze drying. It doesn't make sense I know, but it works on any liquid that is higher in sugar. (The more ripe the fruit the higher the natural sugar)
    Another thing to try; I cut off the rind then slice the citrus. Freeze dry each separately. When dry I powder each separately. Then use the rind to flavor cakes and such. The slices that I powdered I use for lemonade. Saves room in the freezer and I don't have to wait for it to thaw. 😁

    Lemon peels are great for liver health (among other things) 😊 Even the piths can be consumed for valuable nutrients. I've been juicing the peels and piths but it's quite bitter 🙃 I heard that when you mix it with a cup of blueberries it's quite tasty though.

    I don’t know about other areas. I live in Texas, and most schools that have FFA, sell bulk oranges and grapefruit in the fall as a annual fundraiser every year. So, that may be somewhere to check during that time. They are always fresh and very good quality and support an important school organization.

    🤗 last week news said Florida citrus crop is a big failure. Like 40% survived. So $ are going up even if you find some. I did dehydrate some citrus & made some powder. That was successful. Hope all are feeling better. 👏👍

    You are such an inspiration. I don’t usually leave a comment, but I had been suffering with the “illness“ for three weeks. I am finally starting to feel better and your video has motivated me to go out and harvest from my garden. I am in Southern California so I’m able to grow things year-round. Thank you. I throw my beets into the air fryer with the skins on. Once they’re cool they’re very easy to peel.

    Really enjoying your videos. Admire the way you live. I differently will try some of these things I can do too. Just brought a new freezer so can put more aside for winter instead of waste or giving a lot away then having to buy later. We are in the peck of harvesting here in Southland New Zealand.

    Boiling the beets and slipping the skins is an easy method. Thanks for the tip on making lemon extract. I have been gifted Meyer lemons so it’s a perfect time to get juicing.

    The lemon juice freeze dries easier if you freeze it first in your freezer. And yes it store’s beautifully in a jar on the shelf for fresh lemonade. It’s perfect. You should really try it again this way.

    Freeze the lemon juice into ice cubes, then into the freeze dryer. My friend does this and keeps some in the cube shape and grinds the rest like you did with the beet root powder.

    It might not be worth the time or effort, especially because your life is so very busy, but you’re beet root powder was a bit of an inspiration. We do rainbow dinners, that’s every color of the rainbow in one meal. The kids like to help come up ingredients and while it’s easiest for me to just make a soup or salad to get in our colors, I’m rather intrigued with the powders. We make flavored pasta with herbs, powders, and citrus zest. This allows for making gluten free and or allergen free pastas. Our noodles are homemade and I do dry some of them for busy days, so I think I can make this work. 7 different color noodles, using a variety of different vegetable powders. We usually just toss it in garlic olive oil, some Parmesan cheese and colatura de alici (Italian anchovy liquid - think Asian fish sauce but a more salty and liquid then syrupy). The oil that is in the cans or jars your pizza anchovies are packed in can probably be saved for a few weeks as a topping for the pasta, (waste not) and would provide be a nice addition.     Hi I live in Spain born in the UK but I have live here for 19years I have lemon ,lime Orange kumquat trees when I have a lot lemons I cut each one into 8 then freezing them on a tray then bag them up and they become ice cube's to add to drinks and your kids could suck them like lollipops after they have finished their drink xx🍋🍋🍋🍋🍋

    I have a funny story about the beets....My husband had pickled beets as a kid and hated them so for his entire adult life he wouldn't even try them until this last summer. He ended up trying one last year and loved them, lol! I really wanted to make pickled beets last year but I could find the time (we kept getting sick when it was time to make them). What do you use the beetroot powder in? I use it in frosting to make it pink/red. I would really love to get a box of lemons, we probably go through 15 lbs a month (big family). One of the things about the glycerin vs the vodka is the vodka get's all those good essential oils out-more than the glycerin. That freeze dryer looks really nice to have! I didn't even realize they were available. 😅☺

      I made pickled beets for the fist time this year, and I don't like them! I want to though! They just taste like dirt, even with a sweet spice pickling brine. I keep wondering if I can just re process and just add more sugar maybe...idk. I want to eat them though! haha

    While you have fresh beets if you haven’t already tried see how you like them roasted with a little oil and black pepper and salt. I used to eat boiled beets but now my husband and I love the roasted one much better. I also love them pickled.

    I have never used beet root powder. How do you use it in your kitchen? I can see that it would make a great way to dye paper or cloth for crafting, but I don't think that's what you have in mind!!!!! :-)

    Yummy. I bet once the lemonade has completed drying it will be awesome powdered! I heard you are suppose to freeze it first in the tray then it freeze dried faster

    I don’t have a pressure cooker…..can I water bath the beets? I just discovered you site and am so enjoying it. Your children are such little treasures💕. I wonder why you don’t do any dairy?

      My oldest son has an anaphylactic dairy allergy.
      You can only safely water bath beets if you pickle them.

    Jessica, when I googled that info I found Putts citrus and hauling, but right below that it said permanently closed. Not sure what is up with that but I wanted to share what I had found.

    I have seen folks freeze their liquids in the trays before putting them into the freeze drier so they go faster. Not sure since I don't have one. I have a friend in Bakersfield I will ask about the citrus. I was actually born there LOL Thanks for sharing. If I get any information I will share it with you.

    I like salting lemons and limes. They add a lot of flavour to meat and rice/pasta dishes, including the salty brine!

    Wonderful work! I'm taking an IG break right now, and was missing your stories. I was curious ... Do you zest the citrus before juicing it or having the kiddos eat it? I like having lemon zest for cooking as well as orange zest for baking. I imagine it would be far tastier freeze dried than the air drying I do!

    How long does the lemon with the vegetable glycerin take please. And are there other fruits and vegetables you can turn into extract with vegetable glycerin. I'm only asking as iv got 2 tubs of vegetable glycerin and I don't no what to use it with. Have you any ideas please Jessica. I love watching your video's there very inspirational.
