This is very similar to a recipe my family makes, except we do equal parts of Parmesan and Gouda cheeses, and it makes it so much creamier. Highly recommend if anyone is reading this comment and interested in switching things up a bit :)
Last year I watch a number of videos doing something similar with butternut squash but called it vegan mac and cheese. The difference was that they added a potato to it and cooked it on the stove. I did notice that some of them had a little bit of an issue cutting up the squash. So your tip to put it in the microwave is a good one. I cooked spaghetti squash for the first time the year before last. And was surprised at how much I had to work at cutting it up. For some reason I thought it would be similar to cutting a cantaloupe or honey dew. But nope it was a totally different experience. Also I like that this is a dish that your grandmother used to make for you and now you are making it. Maybe your daughter will carry on the tradition at some point? This looks delicious. I'll add the ingredients to my grocery list.
Lip smacking good😊!!! Butternut squash is one of my most favorite things to just eat anytime I roast it and just eat it by itself!!! And it is a pain in the butt to peel so sometimes I use a large mouth potato peeler and that works really well too or I cut it in quarters and I cut the flush away from the peel. Cuz it can be hard😂😂😂 most definitely I am going to try this recipe hopefully for me and my daughter-in-law she loves to try anything new thank you❤❤😊

Cut that half in half and use a potato peeler. I never peel it any other way. 🙂
