    크림치즈와 마스카포네치즈를 한층씩 넣은 더블 치즈케이크를 만들었어요~
    아랫층은 크림치즈를 넣은 베이크드 치즈케이크이고 위에는 마스카포네치즈와 생크림을 섞어 부드러운 크림층으로 만들어봤어요~~
    파리 크라상에서 파는 치즈케이크를 보고 예뻐서 겉에는 스펀지 케이크 시트를 작게 잘라 붙였는데 정말 고급스럽고 색다르고 맛도 더 좋은 것 같아요~^^
    파리 크라상에서 파는 치즈케이크와 레시피는 다르지만 제 나름대로 조합해 만들어 봤는데 르타오 치즈케이크와 비슷한 단면이네요~~
    정말 모든 것이 조화롭게 어우러져서 너무 맛있더라구요~~
    위에 마스카포네 치즈 층이 젤라또 같이 쫀쫀한 느낌이 나서 식감도 더 좋고 훨씬 고소한것 같아요~
    자꾸만 손이가는 맛있는 치즈케이크랍니다~*^^*

    ▶틀 사이즈 Mold size : 15cm
    ▶재료
    달걀 155g
    설탕 90g
    꿀 10g
    바닐라익스트랙 2g
    무염버터 20g
    우유 30g
    크림치즈 40g
    박력분 90g
    크림치즈 160g
    설탕 40g
    바닐라익스트랙 2g
    달걀 1개
    생크림 30g
    박력분 5g
    판젤라틴 3g
    차가운 마스카포네치즈 150g
    설탕 30g
    바닐라익스트랙 2g
    60% 정도 휘핑한 생크림 150g
    ▶레시피
    1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
    2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑한 뒤 박력분을 체 쳐 넣고 섞는다.
    3. 녹인 무염버터, 우유, 크림치즈를 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 18cm 틀에 붓고 170도 예열된 오븐에서 35분 정도 굽는다.
    4. 식힌 시트의 윗면과 밑면을 잘라내고 케이크 밑에 사용할 시트를 1장 자른다.
    5. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞고 달걀, 바닐라익스트랙을 넣고 섞는다.
    6. 생크림을 넣고 섞고 박력분을 체 쳐 넣고 섞는다.
    7. 15cm 틀 바닥에 얇게 잘라둔 케이크 시트 1장을 깔고 치즈 케이크 반죽을 체에 걸러 넣고 150도 예열된 오븐에서 25분 정도 굽고 실온에서 식힌 뒤 냉장실에서 차갑게 식힌다.
    8. 판젤라틴을 차가운물에 10분 정도 불린다.
    9. 차가운 마스카포네 치즈를 부드럽게 풀고 설탕, 바닐라익스트랙을 넣고 섞는다.
    10. 불린 판젤라틴의 물기를 꼭 짜고 전자레인지에 10초 정도 돌려 녹여 (9)에 넣고 전자레인지에 20초 정도 돌리고 섞는다.
    11. 60% 정도 휘핑한 생크림에 (10)을 넣고 섞은 뒤 크림을 조금 덜어 남겨두고 식힌 치즈케이크 위에 붓고 평평히해 냉장실에서 2시간 정도 굳힌다.
    12. 남은 케이크 시트의 가장자리를 잘라내고 작은 큐브모양으로 자른다.
    13. 케이크 틀을 제거 하고 남겨둔 크림을 전체적으로 바른 뒤 작게 자른 스펀지케이크 시트를 붙인다.

    10g Honey
    2g Vanilla extract
    20g Unsalted butter
    30g Milk
    40g Cream cheese
    90g Cake flour
    160g Cream cheese
    40g Sugar
    2g Vanilla extract
    1 Egg
    30g Whipping cream
    5g Cake flour
    3g Gelatin sheet
    150g Cold Mascarpone cheese
    30g Sugar
    2g Vanilla extract
    150g Whipped cream (whipped up 60%)

      The microphones are probably in the little figurines you see, there are ASMR microphones that are like that for immersion purposes (so that you don't see the equipment). So they're aesthetically pleasing and useful!

    i remember my uncle whenever you cut the top off the chiffon. he was a aker too and i always make sure i get the crusts from his baking pans. he would laugh and say he'll give me a slice but for me the crusts are more delicious

    I personally think when you sift the flour , you can be a little more gentle . So that it looks more elegant and soothing.
    But you did a very good job , this is just my opinion.
