Is This the Most Delicious 1800s Dessert? - White Pot Pudding (1830)

  • There are many different versions of the dish called white pot from the 17th-19th centuries. While some had added flour, this one, from the 1830 cookbook The Cook's Dictionary, is more of a caramelly custard. Oh goodness is it delicious! Let's give it a try and see why this dish was so popular for centuries! This dish, which originated in England, was also well loved across the pond in the United States.

    White Pot (The Cook's Dictionary, 1830)
    2 cups of cream
    4 eggs
    1 tsp salt
    0.5 tsp nutmeg
    1/3 cup of sugar
    1 tablespoon of butter, melted (+ 1 teaspoon of butter for greasing your baking pan)
    A handful of raisins
    Enough sliced bread to fill the bottom of your baking pan
    In a bowl whisk together the cream, eggs, salt, nutmeg and sugar till well blended. Boil the raisins in water for 5 minutes. This plumps out the raisins. Once boiled drain the raisins from the water and add into the above prepared cream mixture. Rub a bit of butter over the inside of your baking pan till it is evenly coated. On the bottom of the pan lay in 1, flat layer, thin slices of bread which have had the crusts removed. Over this layer pour your above prepared mixture. Be sure to press in any exposed raisins that may wish to float to the top. Any raisins that are sticking out of the liquid may burn during baking. Bake in a 350 degree oven for 50-60 minutes. After removing from the oven allow it to settle for at least 10 minutes before enjoying.
    *While you can dust the raisins in flour before adding to your liquid I do not personally recommend doing so for this receipt as it will change the originally intended result. This version of white pot is very flan-like, which any added flour will alter. Having the raisins in one layer on top may have been the original presentation of the dish in 1830.
    * desserts such as this were often enjoyed with a sauce that can be made by combining butter, sugar and wine in a saucepan and cooking on low heat for 10 minutes.

    This recipe is very similar to what we now cook as bread and butter pudding. Same ingredients, just butter the bread and lay in a casserole dish before adding the custard with raisins or sultanas added. Still a delicious old fashioned favourite of my grown up family.

      me too! I inherited the recipe from my late mum who had it since she was a kid growing up in inner city Melbourne in the 50s & 60s. I remember eating it many times growing up too. I occasionally make it still for my son.

    I'm Hungarian and we have a very similar recipe, only instead of bread, you use "kifli" slices. Kifli is a crescent-shaped bakery product with a dough similar to a bun. My mom used to do this to us a lot when I was little.❤❤

    My grandmother made a version of this "bread" pudding. Was excellent. My grandma soaked the raisin in rum overnight, for extra flavor. I might have to get the recipe and make some over this weekend. Been a while since i used her Dutch oven.

      You can rehydrate them in booze and then put them in sweets, it cooks out most of the alcohol

    One of my anti-waste desserts (for bread). I love it! It was the "poor dessert" and my grandmother cooked it (and the creamy rice pudding). When I cook it, I always have a thought for her and my ancestors. Thank you for sharing these videos, I can imagine the living conditions when they settled in Quebec in the 17th century.

    Bread and butter pudding a stalwart of school dinners in 70’s in North east England. I used to love being table monitor on the day we had this, going up to pick up a huge piping hot traybake of this and carrying it to the table was always a decadent pleasure. I remember one day we for some reason had a huge jug of custard with it!

    This is very much like a British dessert call Bread n Butter pudding. It’s made exactly the same as your recipe and can be made with stale bread, croissants, brioche or currant buns. It’s obviously the eggs, cream and milk that make the custard but sometimes we sprinkle nutmeg on it. Delicious 🤤

    I don't know why, but I wasn't expecting a custard to end up looking like a muffin on top and a quiche on the bottom; nonetheless, it looks absolutely delicious and I'd love to be able to try this recipe myself! I particularly love the taste of a good Mexican flan, so something like this would probably be right up my alley, even if there are raisins in it.😆 Excellent video, as always!

    So cool that you talk to so many fans. I'm wandering if you and Ron live in a modern house now, until your new home is finished. Only seeing you online I think of you both living in your cabin. Just hope you're both warm.

    Our traditional " bread and butter pudding" in UK. Same custard, sultanas, nutmeg, but layered into slices of buttered bread, usually sprinkled with sugar on top before baking to give a crunchy top. Known to be Prince Charles's ( now the King) favorite desert xxx
