If it is a 16-20 g basket. It means put 20g for dark roast and 16g for light a'd 18 for medium (in general). It does't mean "put any dose you wa't from 16 to 18 g"
I think you got that backwards. James hoffmann lazer analysis showed (a few months ago) that darker the rost is the more porus the bean becamos. So the darker the rost, more water it can take up and expand. The darker the rost it's easier to break up with a grinder resulting in smaller and more even particles(even with super expensive grinders, but even more true with cheaper grinders) Lance Hedrick says greener the bean is it's harder to extract the flavours (it's a well known thing) the easiest fix is (next to temperature increase) to grind finer or increase your dosage!

So if you have 18g dose and you getting 25 sec (or faster) extraction at let's say 2.6 setting on your grinder and you want slower flow rate. You obviously want to increase the resistance of the puck. So you set your grinder 2.5 and your extraction time is 49 seconds or choke. Your grinder step is too big and/or produces to much fine for that bean. It's simply not up to the task. If you grind 2.7 your extraction time is 20 sec. The solution (what is also in the J.H video) is to increase the resistance by increasing your dosage! Instead of 18g now you using 20g on the same grind settings and now the extraction time is 30 sec! You fixed your problem without buying a new grinder! That's the baskets are "from to range" so you can dial in more precisely(a wide range of beans with a wide of equipment) for better extraction, not some arbitrary law of roasts levels of the bean.

Need Help! I was gifted a EspressoWorks Barista Pro Series (30-piece) espresso machine that was brand new. I was able to use it for 2 days and on the 3rd day my grinder stopped working. I checked to make sure it wasn’t clogged, cleaned the grinder area according to the manual, and have been messaging with one of the representatives. I’ve sent her multiple videos that she has asked. Nothing had changed. With or without coffee beans the machine will make the noise but will not grind. The beans just sit in the bean hopper, nothing moves or comes out. Any ideas as to what needs to be replaced, if the grinders/burrs could be replaced, or should I just get a new machine? I can not find any videos regarding this machine besides the “ad” videos that EspressoWorks have on TH-cam.

@@josemancia9386 Pretty normal depending on the circumstance. There is also a correlation between this and the specific beans/prep as well. The decaf at the shop I work at often has watery pucks, while the regular blend does not. The dose of both is around 18, so I attribute that to the decaf process altering the beans enough for them to hold more water.

I'm still using the original tamp that slots into the left of the machine. I've tried to get it so the tamp edge, sits level with the porta filter edge when compressed
@@paulg101 nice one! Let me know how you go. A wet puck could also be because the grind is too coarse too. If you find your grind isn’t getting fine enough you can change the internal burr inside your grinder. Default is 6 and I have mine on 4.

Im new to this. So i just pulled a shot my puck was wet or soupy but also there was an impressions of the shower head. I thought we didnt want an impression if the shower head so i would think less coffee. Maybe i didnt tamp enough.😑
Entirely depends on the basket. Generally unlikely to be a basket more than 16g max but diameter says nothing about the depth of the basket so you might even find 21g 51mm baskets
It doesn’t matter at all how the puck comes out after extraction. It’s the taste of the shot that matters. Increasing the dose just to get a dry puck sounds like a bad idea to me. Instead you could reduce headspace by using a puck screen or buy a precision basket that fits your dose. But in terms of using a Breville/Sage home appliance, I’d rather upgrade to a real espresso machine, lol.

This isn’t always the reason. This is one of the many possible causes.

It's just about the headroom between the shower screen and the coffee puck, which can be large even though you use the correct dose. It doesn't matter

You’re probably over filling the basket. Try a smaller dose (19g) and finer grind size

Okay so my Izzo filter is rated for 6-8g. Even at 9 I get a goopy puck. 10 and the headroom to the showscreen is nil. Advice?
Try grinding Finer and Tamp ultra hard to make sure tablet surface is flat and even!

Some machine may not equiped with solenoid valve, so watery puck is not always a bad thing
