❤️ Taiwanese Stir-fried Rice Noodles Recipe - Cooking with Fen & Lady First
💛 Ingredients (Serves 6):
Rice noodles 1 packet (200g)
Pork 250g
Shrimp 100g
Shallots 80g (After fried, use half)
Cabbage 300g
Carrot 50g
Lard 100~150cc
Coriander 1 small handful (optional)
💛Seasonings:
Light-salted soy sauce 2.5 tbsps (adjust according to the saltiness of the brand)
White pepper powder (to taste)
Salt 3g
Sugar 2 * ¼ tsp
MSG 1 * ¼ tsp (optional)
💛 Main Tools:
- Stainless steel Chinese wok
- Sieve
❤️ "Taiwanese Stir-fried Rice Noodles" Directions:
1. 01:21 Chopping Vegetables & Meat:
- Soak the rice noodles in drinking water for about 20 minutes.
- Grate the carrots into fine shreds. Cut the cabbage into long strips. Chop the cilantro.
- Trim the ends off the shallots, remove the outer skin, and slice them into thin strips.
- Cut the pork into long strips.
2. 02:21 Making Crispy Fried Shallots:
- Heat some pork oil over medium heat in a Chinese wok. Add the thinly sliced shallots and slowly fry until crispy.
- Stir continuously until they turn golden brown, then immediately remove from the wok.
- Separate the shallot crisps from the oil using a sieve. Spread the shallot crisps on a plate to cool. Return the pork oil to the wok.
- Another preparation method: Combine the shallot crisps with pork oil in a jar (without separating) and use a portion to make this dish, storing the rest for future use.
3. 04:33 Stir-Frying Pork, Shrimp, & Shiitake Mushrooms:
- Stir-fry the pork in pork oil, adding seasoning according to the video.
- Add the shrimp and cook until curled and cooked through, then immediately remove and set aside to prevent overcooking.
- Add the mushrooms and stir-fry until fragrant and cooked.
4. 05:41 Braising & Seasoning (about 10-15 minutes):
- Add mushroom water and an appropriate amount of drinking water to the wok, then add seasoning and shallot crisps according to the video.
- Bring to a boil over medium heat, then reduce to low heat and simmer for 10-15 minutes, until the pork is tender.
5. 07:38 Stir-Frying Rice Noodles and Vegetables:
- Cut the soaked rice noodles into shorter lengths (2-3 cuts) and stir-fry in the wok to absorb the broth.
- Ladle out excess broth into a bowl and set aside.
- Stir-fry the carrots, cabbage, cilantro, etc., in the wok in sequence until cooked, but not too soft - a bit of crispness adds to the taste.
- Taste the rice noodles; if it's too firm, add some broth or hot water and cook until it reaches the desired softness.
- Any remaining broth can be refrigerated for future use in making delicious rice noodles soup.
