I use a small single egg frypan, half filled with barely simmering water, to do the same thing. I found as long as the egg is at least 3/4 covered in water it will poach fine. Just gently scoop some water over the egg to set the top. If you do 2 smaller eggs , put in less water so it doesn't over flow. Saves dirtying a larger pan for just one, or two, eggs.

It really does depend on how fresh the eggs are. I like to break them into a tea strainer, which takes away the stringy liquid part of the white, before tipping the egg into water.

As they were cooking, she made toast, lightly buttered, and put it in the middle of the dinner plate. She would serve 2 of the poached eggs over the whole piece of buttered toast. Then she would ladle warm milk over the eggs and toast, just enough to cover the eggs and toast. Those are the best poached eggs I have ever eaten in my life. The milk had the most delicious taste to it, with the margarine and eggs poached together. Beats poaching eggs in water anytime!!!
I enjoy poached eggs but I'm not a very good cook and I've never had the confidence to make them at home. Your video gives me great confidence, though. You made them so simple! A little practice using your method and I think I can make them, too.

The yolk looks more like a well boiled egg, which is what I suspected, seeing the firmness of the white. The key to poach an egg with firm white but runny yolk is a hot temperature (75-80c) over a shorter time, because egg white sets at a higher temperature than yolk. That’s why a tiny bit of flame is usually needed to keep the water temperature high, unless you use sous vide. That way the white will set firm before the yolk gets the time to cook completely.
@kaiparagirl I specifically said the key to get runny yolk. I never said the key for everyone. Also it’s not “MY” taste. Many common breakfast dishes should have poached eggs with runny yolk (e.g. eggs benny, eggs florentine). That’s what restaurants are expected to serve or people will return it. Not that there’s anything wrong with hard-boiled yolk, that’s just not the dish they’ve ordered. If you’ve ordered cobb salad then you’d expect to get hard-boiled yolk. My personal taste has nothing to do with the traditional recipe of a dish.

That's the way I brown my marangue for marangue pies. I bring the oven up to 375 degrees Fahrenheit. And then I just shut the oven off and put in my pie . The marangue browns beautifully without burning.
