The key to all this is Aaron. I followed him through BBQ Pimasters,then bought the meat manifesto book. Been a follower ever since. The book taught me a ton,and i began doing competition. Now i own a small restaurant in Wisconsin, and i still learn from his videos.

I've had the opportunity to meet Aaron a few times now. Absolutely hilarious guy, a master of his craft, and a massive dork in the best way possible lol.
I decided to head up here yesterday by my lonesome, to sit in line, and try some of the best BBQ in the land... so I've been told, seen, had (not fresh, kinda, a boss ordered a brisket for a holiday party in Seattle, and that's where I tried it the first time), and cloned (my best attempts). I spent nearly four hours in line and met a married couple from Houston who was in town for a wedding, a couple friends from Chicago, and another guy from the PnW area, I believe, as we had a lot of memories of Seattle, Tacoma, Vancouver, and all over the PnW. We all chatted, had a few drinks, and waited in excitement to try some really good BBQ. And I will tell you, it far exceeded my expectations. The best barbeque I've ever had. Even just chatting with the staff was nice. Taylor was great, as she came out and gave us notifications a few times. All of us even chatted about WA/OR area since I was wearing my Tacoma Rainiers hat, and she knew of the team being from OR. All the years my family and I lived in Central Texas, we never got to try Franklin Barbecue! It’s rated one of the best BBQ places in the country. And, oh my lamb… the wait was worth it. I would absolutely bs with folks from all over the country and do it again for four more hours. Every time I smoke a brisket, it’s always Central Texas style, and has always been from watching Aaron Franklin’s Master Class channel. Yesterday was an awesome day. Will definitely do again.
I have a friend in Austin and he and his wife won a full meat dinner which was after normal service. He told me he would never wait in line there, but, the ribs were the best he's ever had. America is hungry for this…..far beyond good bbq. Back to simplicity, home made goodness, people in the community. Local butchers and bakers, farmers markets….list goes on. A young skilled girl in my community opened a small bakery, she is literally sold out 2 hrs after she opens, people line up no different than Aaron’s BBQ.
I was thankful to be able to go to the restaurant. Such a cool experience. I don’t think people realize the vibe of waiting in line there. Johnny Cash music among other great sounds while you are waiting in line.
wow crazy expansion. I've only got down there once, back in 2014. Must smaller establishment then. Still remember my time in the line fondly, sharing stories with random strangers from all over- 3-4 hours goes by quick with good company. Life changing visit really.

I doubt it’s 33 dollars per hour per smoker. The average cost of a cord of post oak is about 600 dollars in Austin. He said they go through 6 cords per week @56 weeks that’s 336 cords a year. 336 cords @600 that’s $201,600 in wood per year. I saw 5 smokers that’s $40,320 per smoker per year.

I’m from northern Minnesota (indescribably colder than anywhere in England) and live in Austin now. There’s plenty of winter days that are in the 20s and 30s down here, just doesn’t last too long!

I visited the restaurant in 2021, besides the incredible food you can tell they have come so far, the place is big but it grew from small, they deserve the success, food, customer treatment, merchandise, is all so nice. Every penny's worth, i'm jealous i didn't meet Franklin though, such a fun and smart guy, maybe when i return
