That being said he's about 10 years ahead of the everydayer or he's right on time for the right dream and idea. The variety is Insane and yet simple. Awesome presentation. Great staff. Hands down should he should be easily getting a Michelin and James Beard. A teacher that's naturally great at doing. Peace and Prosperity to this Chef.

Wow I would love to travel to Singapore and eat at this restaurant. It's incredible! There's an emphasis on high quality fresh ingredients. This chef truly understands flavor and that it takes time to develop it and he puts that time in. He's also really on top of things. His entire brigade is a well-oiled machine. His manner of running The restaurant is very efficient.

The downside to the business model is that you must hit your numbers by feeding wealthy folks that can afford the prices they charge. Lose that demographic group for any reason, and you're immediately in trouble.
I am not sure but the most common wood fired grill is the Josper Grill. If you check on Nisbets you will find some smaller versions of these grills. Hope this helps

So I looked at it, this place is actually a restaurant in an extremely expensive (aka $1000+/night) hotel called Raffles Singapore. They are charging an extremely expensive amount for the rich clientele of the hotel. That is why they have such low covers. Tasting menu alone is like $220/person, before any alcohol.
Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!

Singapore 🇸🇬 is a wonderful place. Since this restaurant is in Raffles Hotel (5 Star) I know it is first class and quite expensive but well worth a one time splurge.
