Like Peking duck, no, instead a bit Smokey from the chilli oil, nutty from the sesame sauce, and the very slightest bit sour from the vinegar. Packed with flavour!

I love Shui Zhu Yu. The first time I tried it in was in Pittsburgh at a really nice Chinese restaurant. I thought I was having a mild allergic reaction. That numb is addictive. When I studied in Shanghai, I ate it every week. It is one of my favorite dishes. So I bet I would love Tianshui Malatang.

Tianshui means heavenly water... definitely one of the cooler ancient place names in China! It is situated along the upstream reaches of the Wei River, which flows through Xi'an further downstream before joining the Yellow River at Sanmenxia.
