I think is a huge reason why she is attracting followers, is because she is so genuine and warm to people.
She isn’t a typical privileged foreigner who is judgmental when things are different from what they are used to. I could easily see how foreigners would fringe at sleeper train steps (complain it’s too hard to use) or dismiss the baked sweet potato selling car as unsanitary or weird.
Amy just embraces these different things and gets excited about discovering them. You can tell that she truly loves China, the food, and the people.

100%. she isn't one of those content creators that are looking for arguments or controversial things to "give an opinion about". she's respectful, and that alone gets her so much brownie points. and to make it better, she's genuinely excited and curious, and it shows through the screen and in person. heck if she's just faking it, im sure that taxi driver wouldn't have stopped in the middle of the road and literally took her to the street vendor. that's just so freaking wholesome. he treated her like a friend.

You can tell by her is that she is deeply in love with the culture. Her mandarin is incredibly fluent at almost native or even native. She takes her time to learn the language and live like a local.
Many foreigners in China are just there to make a quick buck, exploit the cheaper cost of living or worst get a wife because it's much easier to get one than in their home countries. Though to think about it, it does happen to all 3rd world countries.

I was same like you, or still having this social anxiety, but there was once I tried to have a break and take a look at if anybody around really cared about what I might look like or what I was doing, and guess what, nobody cares! nobody was looking at me in the way I might have imagined!
Yes, we should know that we are not that important as we ourselves might see it. People are all minding their own business, and they don't give a shit about other total strangers at all. In fact, if you ask them to take more look at us, they are gonna be like who the fuck are you😂
THIS!!! I was trying to come up with the words so I thank you for voicing it perfectly. I wish I could be so outgoing and I love how she gave the driver her continued business and how absolutely open she is to trying absolutely whatever the locals say is the best. I feel like, at least where I'm from, we don't really do that we're so disconnected a lot of the time but I see so much of this in other cultures and it makes me a little envious that this kind of comfort exists.
I would say it is way easier in china than in other countries, and especially when you are a foreigner ! People are just way more open to talk, and talkative too, especially when it is about food lol

Amy is definitely confident in her noodle eating abilities to seemingly always wear white clothes when eating noodles especially ones with a ton of chilli oil.

Interestingly enough, the modern instant noodles are also cooked twice. I'm surprised no one has commercialized it as the ancient instant noodles. Amy, business oppportunity. Derik, that's what you're getting for the rest of your adult life.

The Chinese and Italians have so many types and shapes of noodles. My favorite recently is the wide Chinese kind sliced with a knife.

@JaniceWithTheTarlovCyst Have you considered getting a sleep study done? I never thought I needed one but I found out I stopped breathing something like 48 times in an hour! Explains why I was always so tired. Please consider it, poor sleep has a huge impact on our health.

我是青海的,我来列一下青海小吃吧,酿皮,梗皮,老酸奶(表面有一层黄色奶皮),狗浇尿(一种薄饼),甜醅,湟源酸辣里脊(不一定非去湟源吃,西宁也有很多不错的),羊肠面(我最爱的搭配是,一碗素面+一碗面肠肉肠混合),干拌面,炮仗面,烤羊肉串,烤羊排,炕羊排,手抓羊肉,青稞饼,牦牛肉干(超市里可以买的零食,我喜欢蓝色袋子那个牌子),青稞酒,青稞酸奶,八宝茶,蕨麻(可以用来煮粥的一种农产品),先列这么多吧,我想到再补充
如果你时间紧,不知道去哪里吃。那我简单推荐一下吧,莫家街里的马忠食府可以吃到上面我列出的大部分美食。但马忠食府这些年争议比较大。因为宣传的比较好吧可能,游客越来越多,所以东西价格一路飞涨,这是真的。也有许多本地人觉得马忠食府味道不如以前了。我作为本地人,客观地说,马忠食府价格现在真的相对偏高一些,比它味道做的好的店也确实越来越多。但我觉得它的味道还是可以秒杀绝大部分同类型店的。对于游客来讲,一次性品尝到多种地道青海美食,这里依旧是个不错的选择。

When making it, oil is poured from a kettle in a swirling motion over the dough, resembling how a dog pees. This resemblance gave rise to the local folk term. There are many profound and extensive aspects of Chinese culture that may be unfamiliar to some. It's advisable to research more to gain a better understanding.

Wow, being close to the border with Shanxi 山西 Province the accent of Heyang sounds closer to Shanxi accent than it is to Shaanxi 陕西 accent. Reminds of the video you made in the city in Jiangxi which was closer to Hunan in cuisine style than to typical Jiangxi cuisine.

Interesting that the ancient instant noodles restaurant owner mentioned that many do not like it bc the lack of vegetables and meat to go with it. WHY WON’T he add vegetables and meat as sides to the noodles? No one is preventing him from doing so. This is a classical example of some Chinese don’t want to change bc it is tradition! Imagine one can order brisket, pork, or other meat with that noodles!
So cool! I love that story - the family who made the noodles you tried seemed so sweet. Its so interesting that instant noodles have existed for so long. But also that so many people said you may not like them. I wonder why? Maybe the trend away from carbs.

The founder of Nissin, Momofuku Ando was actually born in Taiwan.
Make at home, with scissors 🧑🍳 Make a batter with strong / bread flour and water. Make pancakes in a frying pan. Cut into strips. Prepare chilli oil, chopped spring onions and coriander leaf - again with scissors. Drop noodles in boiling water for 10 seconds. Enjoy : )
One can experiment with adding salt, black pepper, egg, herbs etc to the batter. Also,, one can try rice flour - leave the batter quite a while / warm for the rice to fully dissolve.
Taking it further, try thin crust pizza (add tomato paste / ketchup then cheese, onions, peppers, etc. onto the pancake then oven or grill), cannelloni, lasagne (cut pancakes to size), and dumplings : )
If you are for adventure, try a paper shredder to cut the noodles. Might work if the pancake is thin enough and not too soft. Untested idea - maybe great idea, or maybe ridiculous.

the modern day instant noodles was invented nearly 65 yrs ago in japan by a chinese immigrant to japan . He was the founder of japan famous Nissin Food Product

This is by far the best video u posted on food, did you know that instant noodles rescued world hunger, instant noodle is a Chinese invention but the Japanese pushed it out to the world, may this be why the Chinese population grew with solving the ancient hunger issue?

I used to think the most ancient instant noodle is yeemian 伊麵, i.e. pre-fried noodle from Song dynasty, that you can eat by boiling it for just minutes.
“Noodle approver” is a great phrase.
There's also a type of ancient Chinese instant noodle that's frozen too (the first in the world). I didn't know they did a "fresh" version. Very cool.

Japan invented instant noodles in 1958, but in Qing Dynasty, the Chinese had already invented a more efficient shrimp noodle that was steamed and baked instead of fried. Even no need to put MSG, that’s "real instant". They use broth and Shrimp roe to make the dough, , so boiled directly, it is already salty and umami enough.
日本1958年發明方便麵,而早在清代,中國人已經發明更有效率的蝦子麵,不經油炸,而是蒸烘,連包裝紙和味精也省掉的「真‧方便麵」 用高湯和蝦籽活面,所以直接水煮,已經足夠咸鮮
It reminds me of a thing in germany called fladle-suppe (apologies for spelling) that has pieces of what look like pancake in it.
In Austria we have Fritattensuppe. The striped pancakes are made with milk, eggs and flour served in a beef broth.

When you head back east you should make a stop along the way in Taiyuan and try their special aged vinegar. There’s a vinegar museum that’s kind of like a winery tour where you can see the aging process and sample. They even have vinegar ice cream.
The area is also known for their maaaany different types of hand pulled and razor sliced noodles, and a spicy fish head soup. There’s also this pasta dish that looks like a giant honeycomb that I can’t remember the name of.
