BETH’S TRIPLE BERRY CHEESECAKE
Serves 8
INGREDIENTS:
For Crust:
2 Cups (475ml) Graham Cracker Crumbs
2 tsp (10 ml) sugar
pinch of salt
6 tbsp (90 ml) melted butter
For filling:
16 oz (460 g) cream cheese
1 cup (100g) powdered sugar
1 tsp (5 ml) vanilla
2 cups (475 ml) heavy cream
½ tsp (2.5ml) vanilla extract
1 tbsp (15 ml) powdered sugar
For Garnish:
1 cup (150g) blackberries
1 cup (150g) raspberries
1 cup (150g) small strawberries cut in half (I like to keep the green tops on because I think it looks rustic and pretty that way)
1 cup (150g) blueberries (for a quadruple berry cheesecake!)
METHOD:
In a large bowl combine graham cracker crumbs, sugar, salt. Whisk to combine. Add melted butter and whisk until damp and clumps together. If you find it’s still too dry add more melted butter in 1 tbsp increments.
Pour crumbs into a 9 inch (23cm) cheesecake pan, pressing crumbs into the pan and working up the sides, pressing until a 2-inch crust is formed.
Bake at 375F/(190C) for 6-7 minutes until golden brown. Set aside to cool.
Then beat together the cream cheese and sugar until combined. Add vanilla and beat until combined. Remove the mixture in place in a large bowl.
Then whip cream on high until stiff peaks form. Add cream cheese mixture, to whipped cream and whisk until combined.
Pour mixture into cooled crust and smooth with an offset spatula. Cover with foil. Place in the fridge for at least 2 hours to set up. But overnight will be even better! It will be firmer and more like a cheesecake consistency. At 2 hours it will be a bit more “mousse-like”. But really either is great!
Then decorate with fresh berries in the center of the cake just before serving. Slice into wedges and serve!

I don’t care for traditional cheesecake as it seems “heavy” to me. But this recipe is divine! Absolutely delicious!! Made it for a friends birthday after I discovered a very dusty never used spring form pan. Don’t worry I did wash it 😉. Now making 2 of them to celebrate my grandson’s 18th birthday. He is not a cake person but enjoys cheesecake. Pretty funny as I “cake” a lot, novelty cakes for family and clients. Will add this to my repertoire ❤️

You had given me some tips on another video for a good Easter menu, which I made and it turned out so well! just a suggestion: what i did was to make the filling and serve it with berries and choc pieces it became gluten free, Beth's idea in one of her videos to omit cookie crumb, it was a hit of course

Digestive biscuits are like those breakfast cookies we have nowadays. Oaty and crispy/crunchy.
Beautiful cheesecake!!! So many delicious contrasting flavors like the crunchy crust, rich cream cheese mixture, and the fresh, sweet berries. Would you recommend adding some lemon zest or mint maybe? +Entertaining with Beth
Oh sure either one would be great! I'd do lemon zest in the filling and then you could also sprinkle some freshly chopped mint on top of the berries! Would be very summery and fresh :) Enjoy!

I like to use rich tea biscuits instead of digestives for my biscuit bases. gingernuts are great too.
Hi Beth, I've made this dessert before and it came out perfectly and looked absolutely gorgeous. This time a small piece of the crust has fallen off after I baked it. I patched it with a bit more of the graham cracker crumb/butter mixture and hope this works. I did not bake it again. What do you think ? Also, what do you think of adding a bit of sour cream to the filling ? I'm used to New York style cheesecake which always uses some sour cream. Lastly, I'd just like to say that I love your channel. Your recipes are always great, easy enough to make and look gorgeous. Thank you for all you do to make dinner and entertaining easy, enjoyable and visually delicious as well.
This turned out great for our Easter dinner. A big hit. I didn't make the crust myself, but I will next time. I need a quick release pan. Also, I'm wondering if you could add nuts or spices to the graham cracker mix to make taste even more special.
Yes you absolutely could! You could add pecans and cinnamon, or pistachios and cardamon, almonds and nutmeg. Whichever you like best! I'm so glad it was a hit! :)

digestive biscuits are crumbly wholegrain cookies waaaaayy yummier and a little healthier than graham crackers. You don't need a food processor to break them down just put them in a baggie and beat them a little with a rolling pin. You wouldn't need to add any sugar, just the butter if you use digestive biscuits.
