For those who try it in the meantime, bubbles can likely be eliminated by tapping the filled cake pan on the counter a few times. Don’t do it too hard though-you don’t wanna demolish your crust.

I definitely like cheesecake whenever it has the graham cracker crust on the bottom. There’s also an Italian version of cheesecake, where there’s no graham cracker crust on the bottom. I bet that you like the New York style a lot more.
Excellent! Cracks don't alter the flavor but they annoy me (almost as much as water baths..😉). I'm going to try your baking technique on my next cheesecake. Thank you.😄

I’ve seem to recall when Italy that sometimes the shop keeper might take a corennette (dough?) out of the freezer/ fridge and bake fresh while I’m there. Is there a trick to this or limits on this??
