I'm just here from Koefficient's and IronMouse's horrified reactions over Gordon Ramsay's pegao--and I must say, this is not only a perfect demonstration of proper pegao (unlike Ramsay's), but also a great channel I'm glad to have found. Wonderful singing as well, don Carlos!
Why thank you! Having grown up in Puerto Rico and also loving to cook, white rice is one of my specialties😁 thank you for watching and I’m glad you enjoyed my video.
Us chinese have something similar, we use a claypot with vegetable oil, rice, chicken, chinese sausage, soy sauce and chinese cooking wine and cook it over a charcoal stove. then serve up the stuff in one plate and scrape the crunchy rice from the bottom of the pot that has soaked up all the meat juices into another plate.
Hi Carlos earlier today I came across your video talking about the loss of your wife. Am sorry for your loss after being married to her for so many years. She was a beautiful lady. It is said that time heals all things, and I can see that you are doing so much better and moving on with your life in a positive way, especially with your grand children and the rest of your family. You do have a beautiful singing voice and hope you will make more singing videos for us. I also subscribed to your channel a while ago. BTW I noticed you and your beautiful granddaughter are both left handed. Well I am a left handed person as well. May God continue to bless you and give you lots of love health peace and happiness 😊. So long for now.
Okay so I've been eating Pegao all this time? XD I'm from the Philippines and whenever the rice is not enough I eat the crunchy part. Good to know about this! God bless and have a nice day Sir :)
Wow. Soy puertorriqueña y es el mejor vídeo que he visto de cómo hacer arroz y pegado. Y esa olla tan limpia. He visto ollas que dan terror. Su cocina también muy bonita. Muchas bendiciones y siga haciendo pegado que le quedó espectacular. Muchas bendiciones desde Puerto Rico.
I used to love eating the crunchy stuff on the bottom when mom made chicken and rice or Spanish rice. They always thought I was weird scraping the pan with a spatula lol
@@lifewithcarlos-vida80s I’m part Cajun so I grew up making rice for a lot of dishes and I got the delicious stuck on rice when I did most of the time. Didn’t know it had a name until now. 😆
OH MY GOODNESS !!!! Pegao- one of my childhood favorites. I love it as white rice, Spanish rice, black rice, arroz con gandules, yellow rice- all different rice dishes BUT the pegao part is my favorite. I remember my abuela giving it to me in a small plate and I would add ketchup to the white rice pegao con pique----- oh so good. All the other pegaos I did not add anything to them, just enjoyed the flavors as is.
I'm not Latino but ngl the dish makes sense in my head, it's like familiar but it's also not, idk like i could follow it and like oh yeh that do make sense
I was wondering why he didnt wash the rice. Maybe that was on purpose? So the oil sticks better to the rice because you don't want your rice to be wet when you mix it in the oil? BUT I am thinking if I wash the rice the night before and let it dry back out...if that would be better? I know left over rice can be used too, maybe thats why? Because the rice has already been washed, dried, and the bottom crisps up better?

Yes, the crunchy rice is the best part for me! Pegao is easy to make and delicious to eat.
Just found you here today, playing catch-up…you do a great job, seems to come natural to you. The Pegao looks good😋
Suurree you didn't came from Ironmouse & Koeffizient Reactions on Gordon Ramsay's Pegao
I love your singing, Papa!
Its required for every video ..

Muchas gracias, Tere por sus alagos. Yo hago arroz más por el Pegao!! Vió el ultimo video de chicken fettuccine?
Increíble, un gringo qué hace pegao.! Dios los bendiga
No soy gringo, soy boricua de pura cepa.
Thank you for this video and best wishes to you both.
Thank you Carlos - love your videos 👏
Glad you like them!
I love pegao with a little mayo and Tajin on top. My niece’s Barbadian in-laws make a similar dish but eat it with fresh lime juice squeezed on it.
I used to love eating the crunchy stuff on the bottom when mom made chicken and rice or Spanish rice. They always thought I was weird scraping the pan with a spatula lol
I have apparently been making pegao for YEARS by accident without even knowing.
There is a difference between “making Pegao” and burning rice… Lol!
Truly though, thank you for watching my video😁

Same! And it’s always my favorite part. I serve the cooked rice and eat the over cooked part for myself

We are minded souls. Nada cómo un buen pegao.
Another Carlos classic ..

👍🏼🇵🇷🔥🔥🔥🔥 gotta throw the bean gravy over that papi
I live in Jamaica and all this time I've been eating pegao without knowing
Isn’t it GOOD??
@@lifewithcarlos-vida80s super good 😊
You didn't wash the rice, but I love it, will try.
This man needs to teach Gordon Ramsey the proper way to do this, because Gordon has no clue what he's doing lol
Thank you for your comment.

If you put enough oil.. Not to drown your rice.. The pegao would slide out like butter.. From chef yo amateur
I’ll have to try it the next time.
If you’re a PRO, why aren’t you making a video!? 😂
Thank you
💙🙏🏻💙
How do you make enough pegao to feed a whole family? It must take ages!
Ha ha!! You need a BIG rice pan.
I wish Gordon Ramsay had seen this vid first, lol.
Thank you for the comparison
Anyone got this recommended after watching Ironmouse vid about Gordon Ramsay cooking pegao the wrong way?😅
Concon u mean
Something is wrong. Should be a sheet in brown that you dig under and lift up. Then you break up the sheet with your hands.
That happens when you put more oil
@@carlosvargas7929 I see online and testing for myself, amount of oil is irrelevant. You must use a nonstick pot.
That’s concon
Married to Mr Lopez 6 months tmw -- I am cooking pegao; thank u ❤
Best of luck! And buen provecho
