I went to a Amish flea market last week. I got my lunch and a piece of pecan pie. Oh my!!!! It did not taste like total sugar. It also had a really smooth, creamy texture to the stuff under the pecans. You could really taste the nuts the most. I asked one of the Amish ladies if she knew of anyone with the recipe. She told me that alot of the ladies in Clare Mi got together and made a cookbook with all their favorite recipes. I went to the Amish store and found it. It also has something called everything cookies. Yummm! I really love your videos. You are such a peaceful soul.

I can't use your recipe because it uses corn meal. Thats the reason, well the biggest reason, for looking for a non-corn syrup recipe. I have a corn allergy. I prob had it for yrs b4 I got tested & found out & alot more ppl most likely have an allergy to it also, even if its a slight 1, ppl can get stomach aches or itchy skin. I claw my skin & get bad stomach upset. Corn is not broken down by our bodies. The corn mentioned in the Bible is not the same as the corn we get in today's world, so flour would be a healthier option for all. But most of all Corn syrup itself is really bad for ppl. I use healthier flour alternatives also & I get those from a local Amish store, who runs them on sale near the holidays, but now Krogers carry them also & Walmart has a fw options, but they are most expensive. Bobs Red Mill brand. They do have other brands too. Happy baking!
I did notice you only use 2 eggs per pie & I see that other places also & am wondering if its worth wasting 4 extra eggs to make 2 pies, with the price of eggs these days, so I may use 2 eggs per pie also.

She never ever made a pie. I taught her. I have left the business for health reasons. She is doing very well. She even made a grape pie.

My partner has tried to make pie crust from videos before, but they all stress very tiny amounts of water and barely working the mixture at all. He ends up with a pile of dry crumbs when he follows the instructions on the others, but I'm going to have him watch you make this pie crust, which is so much like my stepmom used to make. Yes we have to buy pecans here too. Only black walnuts grow here. And we use English walnuts sometimes for pies too busing the same recipe just different nuts
Another alternative is a southern chess pie which is a Scottish pie simular to the English pecan pie. The southern chess calls for brown sugar instead of corn syrup and walnuts instead of pecans. The taste and texture are almost identical to the pecan pie.

It's so nice to see someone else, like me, who does not put their pie dough in the fridge I don't know where that silly idea ever came from. I've been baking pies and other wonderful things for decades, just teaching myself. Your pecan pie looks delicious. I think the use of maple syrup is ideal for this type of pie.
If ppl use butter for their crust it’s best to keep it cold so that the butter doesn’t melt and allow air into the doe Ppl tend to prefer flaky crust and refrigeration tends to insure that.
A silly idea? For the bakers who prefer butter...the butter has to stay could during the process, chilling the dough for a few minutes before filling is great for flaky and tender crust.
I only use real maple 🍁 syrup when i make butter tarts or certain pies. You just need to cook the maple syrup slowly, keep stirring until it thickens like corn syrup. Makes a much nicer tart or pie. I also use a fist full of brown sugar in my pie crust. Mix the brown sugar with the flour then sift to blend it nicely.
This is so cool to see because a couple weeks ago I used a similar idea to make an apple pecan pie by using apple syrup which I made by boiling down apple juice. I imagine this maple syrup based pie has a maple flavor to it, which my niece would absolutely love.

I made a pecan pie with maple syrup last year and it was a hit! I used a vanilla infused syrup and sprinkled the top of the pie with flakey salt. It was to die for! Yours look delicious!

I 'm so glad you said you like your dough a little sticky instead of too dry!! Nothing makes me madder than rolling out a crust and have it crack all around the edges. Grrrr!! Most TV cooks stress not using too much water, and letting it rest to hydrate. I like your method a lot better!!
Pecan Pie was my uncle's favorite, and my Grandmother always made it with corn syrup. This pie needs to make its way back into my holiday menu. I am really looking forward to trying this recipe without the corn syrup.

Ruthann you are my go to for healthy and no problem baking. Today I will attempt a pie crust. My grandma used to make apple pies and they were excellent. Don’t really like apple pie anymore probably because we had them on a weekly basis. However I never made a chocolate pie which I really like and will also try a pecan pie. My wife hates greasy pie crust I’m hoping the lard will make a difference. Love watching your videos and loving family. The Christmas cookies show was on the top of the list. That was a lot of cookies.

The thing, though is that formal recipes are scaled so that 1 cup has the specific amount of weight of flour based on spooning it in rather than packing it in. So the comparable weight is built based on a specific style of filling it.

The only thing I do differently is add 1 TBS of vinegar to water. It really made the crust a lot more flakey. I love your recipes. I even made sour dough pizza crust yesterday. I love thin crust pizza. It took the flavor up and made a beautiful crust.

I hope everyone understands that simple corn syrup (Karo type) is NOT HFCS (high fructose corn syrup). Corn syrup is an invert sugar that stabilizes things, that's all. Thank you for sharing with us!
Most corn in corn syrups now is genetically modified to not die when they spray the fields with Roundup. Consequently any manufactured food product with corn or corn syrup will have traces of Roundup & glyphosate in it to mess with your health.
I just looked it up and thank you! I think where I have the problem is....if you are not eating organic corn, all the pesticides go into the cob and kernels of corn. Not sure how corn syrup is made but I made a mock maple syrup using corn cobs (organic corn of course) So in essence if you are buying Karo Syrup you are consuming pesticides in large quantities.

In the 80’s, my home economics teacher instructed us to roll/rotate our flour container around to fluff it before using. I’ve always done that until I graduated to a scale. I still do some days when I dont feel like getting out the scale. 😊😉 I’ve never made pie dough with baking soda before. I’m going to try it out.

@ The recipe makes two pies if you use 9” pie shells. Also, corn meal is another name for corn flour.

I also use BUTTER for my pie crust. I refrigerate about 30+ minutes.

My mother always used lard. Lard brings so much more flavor to the crust than vegetable shortening.
Both lard and shortening are flavorless.
I use half lard and half cold butter. I love vintage cook books.

I made a pecan pie with maple syrup last year and it was a hit! I used a vanilla infused syrup and sprinkled the top of the pie with flakey salt. It was to die for! Yours look delicious!

Thanks for the step by step on making pie dough. My mother always had a pie making day and would make upwards to 15 pies and then freeze them. For some reason I never got the knack for making the crust. I'm going to try again. Thanks Ruth Ann! ❤️
Hi, I just stumbled across your website and I have only watched a couple so far. But it's refreshing to see that people still cook and bake from scratch. My grandma made everything from scratch , right down to her noodles. And my mom made some things from scratch. Unfortunately they were the kind of women that didn't want children under foot. There is absolutely no need to use corn syrup in anything. It seems to be a uniquely US thing.
I 'm so glad you said you like your dough a little sticky instead of too dry!! Nothing makes me madder than rolling out a crust and have it crack all around the edges. Grrrr!! Most TV cooks stress not using too much water, and letting it rest to hydrate. I like your method a lot better!!

Pecan Pie was my uncle's favorite, and my Grandmother always made it with corn syrup. This pie needs to make its way back into my holiday menu. I am really looking forward to trying this recipe without the corn syrup.

Ruthann you are my go to for healthy and no problem baking. Today I will attempt a pie crust. My grandma used to make apple pies and they were excellent. Don’t really like apple pie anymore probably because we had them on a weekly basis. However I never made a chocolate pie which I really like and will also try a pecan pie. My wife hates greasy pie crust I’m hoping the lard will make a difference. Love watching your videos and loving family. The Christmas cookies show was on the top of the list. That was a lot of cookies.

I do not have lard or tallow, so I use my good old stand by, butter but I increased from 1 c to 1 &1/2 c! Beautiful!! Thank you. I wish I had been instructed in your Mennonite ways coming up. I enjoy doing things from scratch, quilting and crocheting. I just need to learn how to garden now!!😮😅 Thank you for everything Mennonite!!

The thing, though is that formal recipes are scaled so that 1 cup has the specific amount of weight of flour based on spooning it in rather than packing it in. So the comparable weight is built based on a specific style of filling it.

The only thing I do differently is add 1 TBS of vinegar to water. It really made the crust a lot more flakey.

I hope everyone understands that simple corn syrup (Karo type) is NOT HFCS (high fructose corn syrup). Corn syrup is an invert sugar that stabilizes things, that's all. Thank you for sharing with us!
Most corn in corn syrups now is genetically modified to not die when they spray the fields with Roundup. Consequently any manufactured food product with corn or corn syrup will have traces of Roundup & glyphosate in it to mess with your health.
I just looked it up and thank you! I think where I have the problem is....if you are not eating organic corn, all the pesticides go into the cob and kernels of corn. Not sure how corn syrup is made but I made a mock maple syrup using corn cobs (organic corn of course) So in essence if you are buying Karo Syrup you are consuming pesticides in large quantities.
You make the pie crust look so easy to put together! i am going to try it. I have only ever made one pie with a homemade crust and those was many years ago. Thank you for demonstrating the measuring of the flour, makes sense, and, the cut off crust doesn't get added into the other crust dough since it has extra flour worked into it. In the 80’s, my home economics teacher instructed us to roll/rotate our flour container around to fluff it before using. I’ve always done that until I graduated to a scale. I still do some days when I dont feel like getting out the scale. 😊😉
