    I have to try this soon. Also my Bride gave me one of your woks for Christmas and I have been enjoying it, very much. Now I have a good reason to stir fry, at least once a week. Thanks for the awesome recipes and lessons.

      I have her wok, too. I seasoned it per directions and used it often for about a month. But then I must have screwed up and cooked something on too high of a heat. Half of the pretty black coating chipped off and I can’t use the wok anymore. Sad. 😢

    This looks fantastic! The spice powder sounds awesome, a bit like a Chinese version of middle-eastern Dukkah (although that's really more of a spiced crushed nut mixture than a spice powder). And Mandy's enthusiasm is charming as always!

      Can really recommend the wok. We followed Mandy’s instructions to season it and never looked back. We also use a table top cooker which seems to work best with the wok as it seems hotter than the stove.

      @@neilmartin8143 I seasoned that wok and loved using it for about a month. Then some of the black coating chipped off. I think I probably used too high heat or something. 😢

    Thanks for another great recipe! My family loved your lu ruo fan, saying it is much more deeper and complex than the dong po rou I usually make. Is this spice mix similar to the one used on lamb skewers in the north (minus the sichuan peppercorns)? Take care and don't overwork yourself, making your arthritis worse.

    Hi Mandy. I really enjoy your videos and this recipe looks delicious.
    It's not practical for me to find dried orange peel or make one myself just for this pork.
    Do you have a recommended substitute or can i leave this out without affecting the intended taste of your recipe?

      the fat does not make you fat but the sugar will make you fat. If you eat meat and vegetable you will lose weight but you eat sugar stuffs the sugar will stay in which make you gain weight. Eat less sugar, rice, bread, pasta and walk 1/2 hour every day you will lose weight and have a good health.

      Reduce your carb intake, significantly up your fat intake, and maintain a healthy protein intake. You will see yourself no longer always craving for food and your weight is prob gonna go down.

    Does it matter what oil is used for frying? I've done this with vegetable oil before but have struggled to get a crunch like you did!

      John Baxendale. Maybe the Types of Starch or the Temp of the Batter you used. *I can't cook but I Do Know These Two Factors Will affect the crunchiness of fried foods.

    Looks great! But I shun away from having to deep fry anything. I don't know what to do with the used oil, how long I can keep it, etc.

      You can store the used oil and keep reusing it until it becomes too burnt or old. The more you use it the better it gets, so don't waste your oil. Btw when you throw away the oil maybe give it to a car repair shop and remember to not dump it in your sink.

      I keep a small(ish) pressure cooker on a back burner as a container to hold my frying oil. When i'm done frying I let the oil cool to a safer level and dump it back into the pressure pot. I also use a fine mesh strainer that fits the pot perfectly to remove the crunchy bits and the lid seals the oil as good as a bottle. When you need a bit of oil for stir fry, etc. just dip it from the oil pot.
      When the oil takes on flavors I don't like ( I don't reuse oil from fish frying unless it's for more fish) or the smoke point gets too low I pour it back into a saved bottle and dump it into the oil recycle vat at a restaurant or bakery with their permission.

      you can cool old frying oil and dump it over compost or in a compostable bag and then put in a compost bin. old oil is completely compostable, so long as its cooled, and its the easiest way to get rid of it imo
