Vanilla Cake Recipe:
- 1¾ cups (240g) all-purpose flour
- 3 tsp baking powder
- ¼ tsp salt
- 8 tbsp (1 stick / 115g) unsalted butter, at room temperature
- 3 tbsp (45g) vegetable oil
- ¾ cup (150g) granulated white sugar
- 1 tbsp vanilla extract
- 3 large eggs, at room temperature
- ½ cup (120g) plain yogurt, at room temperature
- ½ cup (120g) whole milk, at room temperature

This cake is insanely good . I'm making a layer cake, and because I hadn't used your original recipe ( from 7yrs back), i did a slight combination , as in I used 270g of flour with a slight increase in milk. Your point of not creaming the butter/sugar for longer than a minute was a great tip. I barely had any dome and had no cake wasted from having to trim the top. For anyone wanting to know, I divided the batter into 2, and used 8" round pans . On baking, the cakes were about 1" tall. This has to be one of the best vanilla cakes I've made. Hi Emma! When you upload this recipe I thought to myself: why VanillaCake again..? She already has the perfect Vanillacake recipe on this Channel?! But then I compared the ingredients and had to try it. This recipe is amazing!!! Soo soft, so moist, perfect! I put frozen raspberries before baking, and raspberrycoulis on top after baking, then finished with a raspberrybuttercream. Delicious! Thank you Emma! So now we need a Biscoff-Cake, a Cookiedough-Cake, a MarroniCake and another (white) Version of your OreoCake😋

Idk why though, but my cake batter has been splitting recently. That's never happened to me before. But, it has happened two times in a row now. 😢 my butter is softened, milk and eggs are at room temperature too. So idk what I'm doing wrong! 😭

I am 68 years old and have never seen 7-inch pans here in the US. 6-, 8-, or 9-inch rounds are all I've ever seen, had, or even heard of (besides sheet, or rectangular deep, loaf, bundt, cupcake or mini cupcake, of course).
P.S. I love your recipes, and really looking forward to Amazon sending your book to me next month! ❤
Hi Barbara! You can easily find them on Amazon. You can use 8 inch pans as well but the cake layers will be much thinner. Btw you don't have to buy the 7 inch pans! In the cookbook (techniques chapter) I adapt the cake recipes to fit 8, 9 and 10 inch cakes. 💕

Hi Barbara, just for info, in the US you can get 7 inch cake pans in lots of places online e.g. Amazon, Walmart and Target.

I want to ask that can we make the cake layers in batches too(make the batter together and then keep it in the fridge) if we have oven space for one cake only?
Also answer me the above in respect to other sponges and butter cakes?
Yes, absolutely. If you only have oven space for one cake layer, or you only have one cake pan, bake the two layers in batches. That is the right way to go, and it will work perfectly.

Hi Emma! So, I am not a cake (or cupcake) fan but this local bakery in my city used to make the most incredible vanilla cupcakes. They were really dense, almost velvety. I’ve never had a cupcake with that texture before and I was hooked! Sadly, the person who ran their cake program left and they no longer make those amazing cupcakes. Would this recipe be similar? How could I achieve this super dense cupcake texture?
