  • Hello Frac Crew!
Here is a super quick rundown on how I made Homemade Bratwurst using the Tailgate Bratwurst Sausage mix from PS Seasoning.
Now this video is a little different than my normal content, only because we lost some footage. Luckily we were able to recover enough.
When making sausage it is important to have really good quality ingredients and equipment. I stated off with 25 pounds of pork from HEB. I used my LEM grinder that makes the grinding process so much easier. Of course you need a good seasoning. I am sure there are lots of recipes that you can follow that will give step by step ingredients. I however, used the Tailgate Bratwurst seasoning from PS Seasoning. It comes pre packaged with all of the flavors and curing salts you need and is enough to make 25 pounds of sausage. I also used the casings that PS Seasoning has. I will say that these were really great quality and did not bust like other casings I have used in the past. I was able to use my Father In Laws Stuffer from Cabelas. It makes stuffing sausage as breeze. I try to make my sausage links roughly about 6 inches long. After the links have been made I let them sit overnight in the fridge. I used my Green Mountain Grill to smoke these.
Let me know if you have any other questions!

Excellent! I’ll make these this weekend. I’m going use shiner bock in them. Don’t know if it’ll make any difference, but I get to drink the rest so who cares
