  • Cooking a brisket using indirect heat, and patience! The last clip was shot at 5:30 pm, after resting the brisket for 2.5 hours.

      First Video I've seen using a smoker I own. I've tried lumpwood but seems to ignite the whole lot and hit temps off 500f!! I find this smoker hard to regulate!

    Hey man, great video on how to smoke on a barrel grill. I’m gonna attempt a brisket on Sunday on a similar grill. My question is, how hard was it to maintain temp? How often did you add coals/wood? Thanks!!

      It wasn't hard to maintain temp once I got it where I wanted it. I did add coal a few times, but it wasn't added throughout the cook. I added coals after a few hours in. Hope this helps.

      Regular. Stay away from from the self lighting stuff...too many chemicals 👍🏾

    This was a long and tedious process. One thing I learned, is that this type of cooking is best done in a quality smoker. But I'm glad I did it, and that it turned out great! Enjoy....

    wow. MOST EXCELLENT. seen a lot of other peoples smokes meats...tasted them too. most come out so dry or burnt. look at that smoke ring! look out cooked yet tender!

      Apple, pecan, or cherry! Mesquite will work too but use less chunks than the others because it will impart a more stronger smoke flavor than the others. It can be over powering. Good luck and smoke em up!!! Thanks for watching 👍🏾

    I have question, this will be my first time making a brisket overall and I will be attempting to do it on a barrel grill very much similar to this one.....with three vent two on each side and the one on top of the top portion of the girl...... the top vent, should that be open or closed at all times or how do I go about that?     using this exact method right now on my char griller.. 6hrs in rn 18lb brisket has been wrapped for about 30mins once it reached 165° Now just to let it do its thing..

      question, did u inject anything into the brisket? and about how long was yours wrapped for? did u raise temp while it's wrapped?

      Casmat Matney I didn't inject it. I never do. If I'm cooking a select brisket, I dry brine it overnight with kosher salt. Choice or prime, I don't do anything other than apply rub. This 1 was wrapped for 2 hours, I think. I didn't raise the temp while wrapped.

      thanks for the quick response. as I added a few more coals as needed the temp did raise to 300° but I quickly got it back down. also there probably wouldn't be a need to flip it since it's indirect heat correct? or did u flip also?

    I try this already and I failed at it.. the coals were fine at 250f but I noticed that the flame will go out how many times have you tried to keep up with the fire like once every hour or hour-and-a-half did you added more charcoal or charcoal lumps??

    This is the most difficult method for smoking brisket...you got nads for trying it. You evidently managed the heat escape very well and didn't seem to soar the temp---otherwise your bark would be black & burned. Nice job!

    Last week someone gave me a used NexGrill , it's a dual purpose unit . I can smoke , and grill on it . My used NexGrill looks like your BBQ grill .

    Hey great job! I recently picked one of these up for free from a coworker. His buddy asked him to scrap it but I looked at it and all it needed was a good cleaning out. The problem is I can't find any parts or info about it anywhere. I don't know if you can believe it but googling "backyard grill" brings up a ton of results, lol. What are you using to keep those wood bricks in? Right now I just put it on the hanging grill section on the bottom but it's still annoying to clean.....

      I was using a steel grilling basket. It was pretty thick so I used it as a charcoal basket for this and a little vertical smoker I used to have. I got the basket from home depot.

      @@luvsic4616 it's called a grilling basket. I used it as a "charcoal" basket. If you look for a grilling basket you may have better luck. 👍🏿

    Not sure if you’re going to read this comment but how long does your first batch of charcoal last? And when you add new charcoal can you keep your meat on there while the new charcoal is burning? Will it affect the taste of the meat? I’m asking because I always thought new charcoal gives off “bad smoke” until they are fully lit.

      It lasted a couple hours. It did not affect the taste when I added more charcoal. Although I’ve added charcoal while smoking chicken in the past, and it tasted pretty bad. lol

    In how many hours is ready? And what is the perfect temperature in the grill for start

      You have to monitor the temperature of the meat, not the time or how long it takes. It's ready once it hits around 200 degrees internal temperature. The grill/ smoker should be between 225 and 250 for the entire cook.

      @@armyvet1997 no problem. It's actually a grill basket. It was thick stainless steel. At the time, I had bent the arms back and used it as a charcoal basket for this and a small box smoker that I used to have. Thanks for watching!!

    I have same grill tried but mine runs too hot. Can’t get smoke as it burns the wood up with super high temps. How do you maintain a low temp with smoke?

    Do you just let the wood chips flame when you add them to your coals? I cant get a straight answer from anyone. I thought that if the wood catches a flame, the smoke is not good smoke. But you did it and still had the brisket on in the smoke. i see you started with chunks and added chips during right? I cook indirect as well but I cant figure out what the true way is. Flames or no flames. Your brisket at the end looked amazing. I hope to do that good some day. I started last summer 2019 with smoking so im still learning.

    To get the slow cook/ smoke, are there a setting for the vents or is it trial and error? Also how often did you have to check the coals to add?

      KillerBebe I did adjust the vents but it is trial and error. You want to shoot for around 240-250. The great thing is that you can eat your mistakes! lol. Thanks for watching
