- Smoked Brisket on a Charcoal Grill
I smoked the brisket for 6 hours at 280 degrees over charcoal briquets, Oak and Apple wood chunks. I then wrapped the brisket in butcher paper and foil and cooked it for another 3 hours until the internal temp of the brisket was about 205-208 degrees. Also if you need to you can finish the brisket off in the stove once you wrap it with the oven on 300 degrees for about 3 hours.

Yes I always wrap. With a foil or butcher paper
How long did you let it smoke??
I usually go about 6 or 7 hours
