    Cinnamon Rolls Recipe:
    INGREDIENTS
    Nutrition
    1cup milk
    3tablespoons water
    1egg, beaten
    1⁄4cup butter
    3 1⁄3cups all-purpose white flour
    3tablespoons granulated sugar
    3⁄4teaspoon salt
    2teaspoons yeast
    FILLING
    3⁄4cup packed brown sugar
    3 3⁄4teaspoons cinnamon
2tablespoons softened butter or 2 tablespoons margarine
    GLAZE
    3⁄4cup powdered sugar
    1⁄4teaspoon vanilla
    2 -3teaspoons milk
    DIRECTIONS
Put yeast in bread machine first on bottom, then flour, sugar and salt.
Then melt butter in microwave. Add beaten egg, milk and water.
Pour onto dry ingredients in bread machine on the dough setting.
When dough is done, put it onto a lightly floured surface.
Knead in enough flour to make it easy to handle.
If it is too elastic, cover and leave 10 minutes.
Use floured rolling pin to roll out dough on floured surface.
Roll out into rectangular shape to approx 1/4-inch thick.
Use filling and spread over entire surface of dough with spoon.
    Roll up dough.
Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
Bake in a 350° oven for about 25 minutes, light brown on top.
When done, make glaze and swirl over buns.

Nate, when baking, measuring by weight is technically the correct way of measuring, so just ignore the haters. I appreciate your and your technique, but more importantly the fact that you explain your reasoning

I was about to comment this. I just went through my baking class for my culinary arts degree and every single recipe was in weights. Like he mentions, you can compress flour into the cup at different levels. We did an exercise day one of my very first cooking class where we all measured a cup of flour and then weighed it and there was a massive range. This was our lesson in why going by weights is the way to go since you'll get the same amount of an ingredient every single time.

I’ve baked breads and pastries for 30 years and can add to the overwhelming chorus here saying that measuring by weight is the BEST way to go with baking. Volumetric measures vary way too much by humidity, consistency of ingredients, and all sorts of conditions that change how things like flour settle. Anyone who argues for volumetric measurement when you have a scale should be ignored.

    • @ethelryan257

Precisely. I learned how to cook from my German grandmother in Germany and my Italian grandmother in Italy.
This resistance to learning a better way to do anything which isn't 'American' is cheating us of so much good food.

Measuring by weight is the correct way to measure flour. For exactly the reasons you stated!

    • @blahorgaslisk7763
      @blahorgaslisk7763 2 ปีที่แล้ว

I'd say it's something that depends on what you are used to. Sure measuring by weight is more exact, but I remember how my mom free handed things like this, hardly bothering to measure any of the ingredients. But if you are baking commercially then exact measurements are really important. Same if you are baking something for the first time. Then you don't know exactly what consistency the dough should be so the more exact you are the better the result.
Having said that I've heard professional bakers with more than 30 years experience say that you should always weigh the ingredients. They consider baking being closer to chemistry than art, while cooking is more art than chemistry.

You are 100% correct on weighing it. Bakers use weight as it's actually accurate. Now that I've watched more of the video... Use a BRUSH to add the icing glaze and these DO NOT go in the fridge! Store in an air-tight container. You can freeze them though. No fridge!

A lot of it comes down to if a person is used to eating rich or higher quality foods. If they are, they csn absolutly tell the difference in the quality. For me when my wife bakes with cheap butter, sugar and Eggs I can tell 100% of the time. But I grew up on a farm with organic milk, hand churned organic butter and organic free range eggs.

Hey! I love your videos, especially the brand vs basic, and thought it would be really nice if you could have a "hybrid" recipe, where the major ingredients are expensive brands(i.e flour, butter), but most are just regular, to see how much of a difference it can make, without wasting money on stuff like special salt, sugar water etc.

Calli was right. More frosting! :D
As for future episodes, what about home-made ice cream? Maybe a batch with goat milk VS regular, something along those lines.
Another interesting one could be potato chips or 'loaded' french fries (cheese+bacon variety). Will type of potatoes make a difference? Is expensive oil going to do better in high heat of the fryer? And is getting a fry cutter worth it when compared to just a knife? Even to the point of 'peeled VS unpeeled', will that alone be noticeable? (though personally i prefer unpeeled potatoes, seem to have more flavor to them. Plus less effort and waste.)

Goat milk cornmeal porridge and hominy corn porridge are great, I grew up drinking these.
