🔵 Chicken And Lentils Ras el Hanout || Glen & Friends Cooking

  • This Moroccan Chicken And Lentils Ras el Hanout recipe - is more of a Moroccan Inspired chicken recipe.
    It's an easy weeknight one pan chicken dinner that uses a ras el hanout spice mix for a bold robust flavour combo. Ras el hanout chicken tagine... in a regular pan!
    Ingredients
    6 bone in skin on thighs
    Salt and pepper to taste
    1 medium onion, chopped
    2 garlic cloves, minced
    15 - 30 mL (1-2 Tbsp) ras el hanout
    1 -398 mL (14 ounce) can whole cherry tomatoes
    30 mL (2 Tbsp) vinegar (pomegranate, date, red wine, etc)
    250 mL (1 cup) brown lentils, rinsed
    8-10 dates, chopped500 mL
    (2 cups) chicken stock, + 1 cup extra

    Directions
    Preheat oven to 200ºC (400°F).
    Heat oil in an ovenproof fry pan over medium/high heat.
    Season chicken with salt and pepper..
    Brown the chicken on both sides until golden.
    Remove chicken from the pan and adjust oil levels..
    Add onions, and cook until softened but not brown.
    Add in crushed garlic, and cook for 1-2 minutes.
    Add in ras el hanout, tomatoes, vinegar, lentils, and chopped dates.
    Stir to combine everything in the pan..
    Then stir in the stock.
    Add the chicken pieces back to the pan.
    place pan, uncovered, into oven and bake for 30 to 35 mins.
    Check at about 15-20 minutes to see if you need to add more liquid (stock or water).
    Continue cooking until lentils and chicken are cooked through.

      I bought them by mistake, the skins are present and quite unpleasantly hard, making them a product I'll never buy again. Still, they're quite sweet. I prefer, by far, the fresh ones.

    Wow! Great recipe! I live just a couple hours from the date farms near Thermal CA and I buy them by the 10 lbs. boxes. So I’m always looking for recipes that incorporate dates. This sounds delicious! It’s now in the rotation.

    Made this recipe with lentils and chicken from my pantry and homemade Ras el Hanout. Couldn't go to the grocery store, so I substituted Balsamic for wine vinegar, frozen peas for tomatoes, and 1/4 cup of raspberry jam for dates. It is delicious. I have enough for 3 more meals, thanks Glen. I will make this again.

    Thanks for this recipe. I'll add it to my rotation. Love the idea of making our own spice mix - you can add/omit to preference. I added some cubed butternut squash to the pan with the onions, garlic & lentils and used white wine vinegar. It was really, really tasty. Probably not the best plan to have the oven on at 400 during a May heatwave, but this will definitely fit the bill on cooler nights.

    I made this today and it is very delicious. I’m not a fan of lentils so substituted rice and had fresh cherry tomatoes from the garden. I cooked in an electric skillet so not to heat up the kitchen. I had to watch it closer and stir it every few minutes so will make it in the oven when the weather cools down. Thanks for the recipe. Love your videos.

    This looks really good. Ras el Hanout is the spice mix of all spice mixes. I put it on almost everything I cook. The only other one that comes close is Baharat.

    Looks great,
    I would think of something else you might consider trying, adding turmeric, replacing lentils with split chickpeas, adding potatoes, making more sauce, and replace vinegar with preserved lemons and green olives. You can serve that on the side of couscous.
    I know it is completely different but i do think you should do it sometime

      We don't have them in Australia either. I substituted a punnet of fresh, but thinking any canned tomatoes would do, especially for the juice.

    since you like lentils and beans ever make cholent. We make it with smoked turkey legs/thigh, smoked hock and a piece of beef (any cut). The beans and lentils are a true mixture the more variety the better. Add a couple of potatoes. We add salt and pepper to taste. Cook in a slow cooker for at least 4 hours. The longer the better. It was a traditional mid to eastern European sabbath meal (put in the back of the backer's oven, over night. No sabbath cooking required).

    I think my lentils are refusing to cook because the instructions are to add the vinegar at the start, not the end?

    I love lentils but my roommates hate them so I dont cook them often. They like the taste of lentils, tasty just dont like what lentils do to me

I mention the dates at the point in the recipe where they are added. The dates are also clearly listed in the written recipe in the description box.

      @@pato20995 No it is not. The most widely used dried fruits used in traditional cuisine are apricots, peaches and almonds. Mandarines can be used with duck or rabbit, but it belongs to french cuisine. The use of dates in tagines is very marginal.

      @Robert Ross - Metal on enamel is fine, the metal doesn't harm the enamel finish at all nor does the sound bother me.
