    You won't want to omit the baking soda, but you can try this: for every 1/2 teaspoon of baking soda, substitute with 2 teaspoons of double acting baking powder.

    I just made a batch but after the first 2 minutes in the microwave I wanted to put a towel underneath it, but the sugar and syrup we're already a very dark brown and it smelled burnt. So tomorrow I'm going to try it again and do in 1 minute increments

    If you don't add baking soda, you won't be able to bite into the candy at all. It'll be as hard as a rock.

    Hi there, i tried the recipe, and it looked fine, but after a few hrs at room temperature, it became darker and very sticky. Is it normal? What did i do wrong?

      Doubtful that you did anything wrong, Jasmine Riccardi. Do you live in a high humidity climate? This can create stickiness. Store the brittle in a air-tight container or resealable plastic bag when it's cooled and hardened. It's also possible it wasn't cooked long enough. It has to reach the "hard-crack" stage, which means the strands of sugar break easily and feel dry, not sticky. To rescue the brittle, place it on a cookie sheet covered with parchment paper, and bake it in an oven set at 325 degrees Fahrenheit for 15 to 20 minutes.

      To make it brittle. Otherwise it will be too hard to bite into. Sorry I just saw this recipe and read the comments. Saturday night, November18,2023. Looking for a microwave peanut brittle because this new apartment's stove's oven doesn't work! And I don't know if I will have a new range by Thanks Giving Holiday! So I'm having to find recipes using my microwave and large turkey crockpot Where ever i'm at, you and my beautiful grandbabies will always be welcome any day or night❣️

    Use a wooden spoon to stir or the thing she uses will melt and ruin the batch. Don't use a hammer, just break with your clean hand.
